Scrambled eggs with crimini mushrooms, spinach, and parsley, with flax bread and red grapes. I'm hopeless when it comes to cooking scrambled eggs so DH has to help. And, after all these years, he's gotten used to burnt toast .

I soak the barley overnight in the fridge. i soak 1/2 cup dry barley.
then in the morning i throw it in a pot with 2.5 cups water. i just simmer it on medium, uncovered, til it is done. it takes a while to cook, maybe 30 minutes. you can cover it and let it cook a teeny bit longer if you want the barley more tender. you have to watch it and stir it a little.
i pour milk on it when serving.
this makes 2-3 servings
the reason i eat it is because it has a very low glycemic index, meaning it doesn't make your blood sugar spike. instead you have a steady and slow release of energy into your bloodstream. it leaves you satisfied longer than a breakfast that would just give you a sugar rush.

Today was breakfast at the in laws yay! It was omelettes with tiny diced potatoes done in Indian spices and bacon. It was AMAZING she also served fresh baked bread and 3 kinds of homemade jams and coffee of course ...... I wonder what she's doing tomorrow???? lol
