woke up before 5:00 a.m. so I made a 9" deep dish meat pie and a dozen chix thighs. Thought I'd try using some of those Budweiser BBQ sauces ( used the honey garlic and the smoke one ) Crisped the thighs skin side down first in my cast iron pan, then placed them on top of a thick layer of sliced yellow and orange bell peppers along with the sauce and baked 'em. Nice aroma in here right now, lol.

I didn't get my pizza last night, but tonight I will. There's 'Literacy Night' at DS's school, so it will be eat quick and run back out, pizza is the best option. Plus I went to the gym this morning and pre-burned some of it off.

Son is coming for supper - so I'm finally making his fave funeral potatoes, along with Southern style bbq pork chops done in the oven.
I will make a non-dairy option for me, since the potatoes are all cheesy and sourcreamy - maybe some rice.

HMMM Dinner tonight. Not sure yet. Have a few ideas. My big plan to clean out the fridge last night and plan tonights dinner didn't happen. Salad for sure as we have a 3pk of romaine hearts to use up. There is leftover mac and cheese in fridge so 1 DS can have that with salad if I decide I'm not really cooking tonight lol Will figure out something!

It's apparently a US Mormon tradition - cheap to make, feeds a lot of people, so commonly brought to funeral dinners.
Otherwise known as cheesy hashbrown casserole, apparently.
If you google, there are tons of recipes and variations.
This is the recipe I use:
Thaw 1 kg diced hashbrown potatoes ahead of time.
Sautee one chopped onion and three cloves minced garlic in 2T margarine.
In a big bowl, combine 2 cups sour cream, 2 c. shredded cheddar cheese, one can cream of mushroom soup (can be cream of chicken), 3/4 t salt, 1/4 t pepper.
Add sauteed onion and garlic, and the thawed hashbrowns.
Put in 9x13 pan.
Coarsely crush 3 cups cornflakes, spread over top of the mixure in the pan.
Drizzle over 3-4 T melted magarine.
I also sprinkle a bit of paprika on top.
Bake at 350 degrees about an hour

Those potaoes are also known as potatoes romanoff-my recipe is slightly different but very similar. Our whole extended family loves when I make them and they are great for a crowd with ham or as a vegetarian entree.

a request was made for some fresh tortellini/ravioli with a tomato based sauce, but I am wishing they would clean up what is already made in the fridge......
