@jasperandchar: Do you like buttercream icing? That's the kind I make and it always turns out good.

Here's the recipe I use from Mrs January dot com:

Homemade Butter Cream Frosting (makes enough for 24 cupcakes)

    Ingredients:

    • 1/2 Cup Butter (softened)
    • 1 1/2 Teaspoon Vanilla
    • 2 Cups Icing Sugar
    • 2 Tablespoons Milk
    • 3 Drops Food Colour (Optional)

    Instructions:

    • Beat butter with an electric mixer in a medium bowl until creamy, about 5 minutes.
    • Add milk and vanilla. Mix until combined.
    • Add half of icing sugar, mix until combined, then add the other half and do the same.
    • Add 3 drops of food colour to your frosting, if desired.

Wow, where did the weekend go. I am trying to get my butt off the couch to bake brownies for lunch. I let you know how that turns out, maybe I will make the cookies I did not make last night, I did make. Big batch of easy chili so my lunches are done to the week.

Ha I know what you mean, I think some people call this 7 minute frosting, is it the one where you beat egg whites, sugar and corn syrup over a double boiler? I made this once and it smelled like wet dog to me!!! I make an Italian buttercream that is tricky but to die for. Here is link for a bakery buttercream that I have had luck with,it does taste like bakery frosting.http://thetoughcookie.com/2013/11/30...r-buttercream/

That's right 7 minute frosting that's what my mom called it when I told her what was in it, it was awful, it's too bad I didn't taste it before I iced the cake but thankfully didn't ice the cupcakes .

We've been eating the cake but I have been scrapping off the icing oh well lessons learned try the icing next time before applying

I think we have a hit!!!!! They were perfect when we tried them while hot in oven but made the mistake of not taking them out! So we are going to make about 25 lbs of the potatoes into oven fries for,the freezer but just heat them up at 300 for about 10 mins!
