    This one was a hit!
    I made some modifications but the basics were all there in the initial recipe.
    Served it over red mashed potatoes (skin on!)

    I used 3 poblano peppers and I pre-skinned them under the broiler and added a jalapeno pepper seeded and chopped fine.
    (blackened, rest in an airtight bowl, scrape of the indigestible clear skin and de-seed)
    All beer no beef broth too, double the chili powder and more sprinkled on the meat when I seared it.
    I cooked the roast in a dutch oven at 235 for about 5 hours.
    Will definitely make again and again.
    I will re-write what I did and publish again for sure.
    This ones a keeper!

    Last night I made Pork Chunks with Green Beans, Mushrooms & Onions in a Mushroom Soup based Sauce served over rice. It came out a little watery as the beans were freezer burnt but after simmering the sauce you couldn't tell.

    Tonight will be Mozzarella Chicken with Mushrooms over Pasta

    I pulled a rack of ribs from the freezer last night dated 2016!!! Good thing they were packaged well. 6lbs for $6! It was a good deal! Thawed them overnight. Put them in the crockpot this morning with seasoning and onion cut up and placed on top of the ribs. Will put in oven for 15 mins when I get home with bbq sauce. Will serve to the boys with veggies and some starch.

    Last night was your choice of leftovers. Chicken Alfredo with speghittini, home made burger patties, onion rings, French fries, baby cut carrots, and sliced English cucumber.
    Tonight we had dry fried pork chunks, fresh steamed baby carrots, broccoli, cauliflower, and leftover speghittini. All of our kids ate without an objection. Our twins ate large servings of the steamed veggies.
    Tomorrow night we will have soft tacos with Romaine lettuce and fresh diced tomato. I also sliced an apple to go with it.

    Chicken casserole - cut up dark meat from having made chicken soup, onions, celery, mushrooms, green beans, carrots, peas, corn, all in gravy with lots of garlic; served over mashed potatoes done with beef broth.

    I made supper all by myself, first time after being home from the hospital six weeks! May not seem like a big deal, but yes it is nowadays. It took me all afternoon, spacing out doing things. My whole body is really, really sore now. It was quite the workout!

    It is not easy to figure out how/what to put things in, so I could do the foods in the oven, since I can't stand at the stove and do something like saute onions. Then I have to make sure the food is in a pan/roaster I can hold in one hand - because I have to use my cane in my left hand. Plus, bending is hard, so I have to make sure I can just shove something in.

    All the above is a poor description, but I'll just leave it to say that I took doing all of this stuff for granted - I love cooking and baking, and have missed it terribly...

    maybe you could use a roly chair in the kitchen. I had to use a kitchen chair to sit in front of the stove to stir or wait for toast or coffee-just could not stand. I hear you and good for you getting the dinner made yourself even though you had to do a bit at a time-a great victory and a huge accomplishment after what you have been through!

    Tonight is clean out the fridge leftover night. I will cook up some green beans to go with it.
    Pork chops, chicken and ribs. Mashed potatoes. Will slice up cucumber and carrots too.
    Dinner done!

    there is a tray of thawed skls/bnls chx breasts on my counter and I am trying to think of something new to make with them.
    Do I stuff them? slice them thin and grill them? chop them into chunks and sauce them up?
    Decisions...decisions.....to be continued.

    I have a yummy 5 ingredient dish that your family might like.

    1 lb BNSL chicken breast cut into strips
    1/4 cup smooth peanut butter
    1 can regular coconut milk
    1 tbsp siracha sauce( or more or less to taste)
    tsp salt

    fry chickn in a little olive oil. Cook through and add other ingredients. Garnish with green onions if desired. Serve with rice-this is one of my go to meals as it has very few ingredients and the main course is cooked in the time it takes to cook the rice.
