    Change of plan I have some french baguette with chicken cranberry spread and a cobb salad so lasagna will have to wait until tomorrow

    The chili alarm just went off in my kitchen. I left a note for the guys to do all the veggie dicing, I suspect it was done around 2 a.m. ( when they are up....lol ) I went to bed like a normal person.
    This batch was so easy to make up just now, the soaked beans took 6 minutes to soften in the pressure cooker, browned the meat and onions, spiced it up and added the pasta sauce and veg.
    Covered and low simmered for an 1 hour.

    Our plans for dinner changes last night. I did not realize how late it was when I made lunch so we were not hungry for a big dinner so instead:

    I pulled a bag of Cooked Ground Beef from the freezer, sauteed up some mushrooms & red peppers, added some of the Pasta Sauce I had simmering in the slow cooker all day and some leftover pasta we had in the fridge. Then before serving I topped with Cheddar and Parmesan.

    This meal used up some leftover pasta, a red pepper with a soft spot and some mushrooms we need to use this week. I love meals like this as I am not sure why but we seem to have a lot of randomness in our fridge this week so working to use it up.

    Decided on Chicken Enchiladas with Mushrooms, Onions and Peppers. This has become a go to in our household, so quick and easy to make even with making our own Enchilada Sauce. Bonus we usually have everything we need on hand.

    One thing I did learn Whole Wheat Tortillas are a must, White Tortillas do not stand up to the sauce during baking.
