I was forced to have a sparse dinner tonight because I chose to have an extra large noon time meal. Still turned out rather delectable.
A square piece of Joseph's Lavash bread, ( that is 1/4 of a serving ) layered with a cup of baby spinach leaves, topped with slices from 5 of the Mini, mini Bocconcini cheese balls. Thin sliced tomato on that and in the nuker for 1 minute...Mmmm.
Sides were 50 grams of cooked kidney and other beans mixed with diced celery, green onion and a tbslp of balsamic salad dressing.
A single hard boiled egg and 2 x 5 calorie Jello cups.

made fried rice with leftover rice and garlic pork ribs. New eggs and mixed frozen veggies. Traditional fried rice don't have veggies but i like them in mine and they look pretty with the colors. Made enough for lunch tomorrow too.

Had a late lunch /early dinner in the city today so after my climb ride all I felt like was a smoothie….. and dying

it's my hubby's bday today and he requested donairs from a local shop so that's what i'll be picking up and a pack of root beer; rcss here carries the ones in glass bottles - hopefully it's going to be a throwback for him

Need to get back into the swing of trying new recipes, it adds a nice variety to our meals.
Tonight we will be trying Ground Orange Chicken over Rice and think I will make some green beans on the side.
I got a bunch of Ground Chicken & Turkey before Christmas on sale but we do not seem to eating the recipes we normally use Ground Turkey for so I went online and found some new recipes to try. This is one of them.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Very early this morning I made stuffed peppers with my new diet restrictions. Rice was out ( carbs! ) so I managed to find a lone bag of Konjac rice noodles in the back room. What a bonus!
Also I had bought a large bag of these oddball very l-o-n-g shaped bell peppers at NF last week. The ones that were a sort of burnt sienna colour were a trip. I made 2 of those, a yellow and a red.
Was it wrong to eat stuffed peppers for both breakfast and lunch? ha ha Too late now.
As for dinner I think I better go with soup and a Lavash wrap.

Porkchops in the creuset mijoted with pepper sauce ,carrots and patatoes

It's been about 10 years since I've had mozzarella sticks.. fingers crossed and they won't be deep fried

I made the kids their fav. Tacos. Everything is ready in the fridge so they can heat and eat as they wish.

Down to my second last serving of stuffed peppers last night for dinner. Clearly these were a hit, will make more.
Had it with a full wrap, All veggie inside and hummus spread over the Lavash sheet.
Wished I had a bowl of soup too, but that would have put me over the permitted calorie count for the dinner portion, and there was no way I was going to miss out on my planned late snack.
I had made up just 8 small ( 2" across ) whole wheat pancakes using powdered egg re-placer and plain unsweetened Almond milk.
Two was my serving and I drizzled a single tblsp of pure maple syrup mixed with a teensy bit of water and some vanilla extract.
So delicious, it felt like cheating!

homemade pizza tonight...DH got me excited when he said it was National pizza day (it was actually yesterday). We have some hot italian sausage that I want to cook up and crumble on it along with green peppers

Original dinner plan did not happen, Mom isn't feeling her best and peppers are hit and miss so no fajitas tonight.

Pasta with LOTS of shaved fresh garlic, tomatoes with cubed tofu for protein. Really goood. Also a side of cucumbers and mini carrots with Caesar style dip.
