    it has been a slack weekend for cooking, so I think a nice BBQ is in order for this evening. I have a little chicken so I am going to remove the backbone, flatten out the chicken and cook it over indirect/slow heat on the grill..add lots of spices..and baste with bbq sauce several times towards the last 1/2 hr of cooking. That will take awhile so I will prob slice some potatoes and onion and cook in tinfoil..and I have some baby spinach to use up so will sear in garlic oil and should only take a couple of mins.

    My mom would make borstch all the time with lots of vegies. I never put sour cream because i preferred it clear. I dont really have a recipe for it. I just go by taste. What you need dépends on how big a batch you make. I start with cut up beats like frenchfries but thinner, lots of water, lima or fava beans, some string beans cut into 1 inch pièces, some tender beet stalks with their leaves cut up in 1 inch pieces; a clove or 2 of garlic, lots of dill, cut up carrots, onions and celery, some potatoes cut up in chunks and finally some bacon or kolbassa cut into small pièces. This is all according to taste and i adjust when needed. Add salt to taste. Boil all this until everything is tender. this is a basic recipe and everything dépends on how big a batch you are making. Some people put chunks of meat or cabbage in their borstch but i dont.

    going to son`s house this evening for d-i-l birthday. Its raining so i guess BBQ is out. Dont know what they will be making.

    It is a cold rainy day in Vancouver and Superstore had stewing beef pink stickered when I was there this morning. I have a big pot of beef stew simmering. Perfect meal on a fall day....and a great way to use up the carrots, onions, potatoes etc. that have been hanging around my fridge/pantry for a while! It smells delicious!
    So many coupons....so little time!

    .... Oh my gosh guess who was all Martha Stewart tonight? (hint: me!) I made cream of carrot soup and it was absolutely delicious!! I also made something like hummus.. lol My son ate everything and a lot of it, and my DD had 4 spoonfuls of the soup which is great since I only ever get her to eat one spoonful of anything new. She also ate her tomatoes and cottage cheese and some of the Triscuits with hummus. I made lots so it's going to be a future lunch this week also.

    Well, back from son`s house after celebrating d-i-l`s b-day. She made some sort of thing with Kraft cooking sauce. I think she said she got the recipe from Kraft also. It was rolled up lasagne noodles with that kraft cooking sauce Inside covered with spaghetti meat sauce and baked. Very very good, also very filling. She also made a nice caesar salad and lots of garlic breath. Dessert was a marble chocolate cake and homemade apple pie. Everything was delicious.

    Tonight's dinner will be beef stew I made yesterday so all I have to do is heat it up when I get home. I nice Garden Cocktail base with beef, potatoes and carrots with some crackers on the side. It is 8 am and already I cannot wait to get home and have some.

    Think I will dig into my seafood stash today and take out some cod fillets--will just pan fry, not sure what I will have with it yet, prob just boiled potatoes mashed with butter and maybe some corn..will see..
