Last night was brown basmati rice with tiki masala sauce and fried tofu.
Tonight - now clue, I'm thinking corn pasta with marinara sauce and a ceaser salad

Tonight will be the last of the pork tenderloin (thats what happens with you are an empty nester and still havent learned to cook just for two) and probably with some sort of rice and vegies, tomato and red onion salad and canned pears for dessert.

Snowflakey, I'm in the same boat with amounts...
Today while unpacking I found a casserole dish (!) so I layered potatoes and carrots, with pork loin chops on top, a bit of Italian dressing over it, and baked for an hour and a half.

Last night or should I say this morning because it was 12.30am lol. I used the big boss fryer to make breaded chicken. I put the chicken on an onion bun with pickles and fresh cut fries on the side. After I get home from work tonight I'll do the same thing.

It's Friday! I'm going out to a dinner party this evening so really looking forward to that. Not exactly sure what's on the menu but no doubt will be smorgasbord of food & drinkie as per usual...and I leave for NFLD tomorrow morning for a winter visit, so already looking forward to many jiggs dinners.

Last night was spinach and ricotta calzones, made from homemade pizza dough I keep in the freezer and a package of frozen spinach I found well looking for something else. Plus I got to use up the ricotta we had in the fridge with a best before date of Nov 12th.
I am slowly making improvements on this recipe, the original recipe really does not have much in the filling other than spinach, ricotta and nutmeg. So last night I added fresh ground black pepper and some finely diced onion. It was better but still could use a little more tweaking.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I don't know what's on the menu for tonight since we'll be travelling, but I do know it'll be extra delicious because I don't have to cook and do dishes! hiphip hooray!

Fire Cracker French Toast with Banana Grand Marnier Topping
Ingredients:
¼ cup Roasted red bell peppers
½ cup butter
1 tbls tomato paste
1 1/2 tsp brown sugar
1/4 tsp cayenne pepper
1/2 tsp Tabasco sauce
4 eggs
½ cup of milk or cream
Pinch of salt
French bread or Ciabatta Bread cut into thick slices.
(you can also use raisin bread or egg bread)
Method:
Puree red bell peppers in food processor. Add butter, tomato paste,
Brown sugar, cayenne & Tabasco mix together. Add eggs & milk & blend.
Transfer to bowl & dip bread into mixture & cook in cast iron skillet or non stick frying pan.
Topping:
Slice two bananas into pan with 3 tbls of Grand Marnier & stir gently for 3 minutes.
Plate it up & drizzle with maple syrup & use the real thing. Consume & hope for the best.

Yesterday afternoon ended up developing a migraine and my eyes were blurry and I was nauseated and dizzy..so fiance had left over lunch for his dinner and he got me McDonald chicken nuggets and fries - so odd when I am sick with the flu, cold or anything else the only food I can keep down is McDonald chicken nuggets or reg hamburger and fries lol Ever since I was a kid...
Tonight I'm thinking nachos with homemade salsa, cheese, spicy chicken and jalapenos

A guy could starve down here in Fla. I mean if you don't like oranges or tangerines or grapefruit
or pineapple or mango or the twenty other unidentifiable fruit you could just waste away to nothing.
Then there's the seafood, shark bites, crab cakes, conch fritters, lobster ,scallops who eats that stuff anyway?@
