Tonight - roasted chicken thighs with tons o'garlic, with onions, potatoes, tomatoes, and carrots. One roaster, no fuss. I thicken the juices so there's a nice sauce to have with it.

Last night was Lazy Lasagna with Homemade French Bread turned into Garlic Bread. Garlic Bread was a bit disappointing think I actually prefer using store bought bread for Garlic Bread as the butter did seem to soak into the bread it all just sat on top.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Last night was a Pork Roast with Butter Roasted Potatoes and Green & Yellow Bean & Baby Carrots with Butter and Parm. Not bad considering we could not figure out what to have for dinner.

I am doing volunteer work from Tuesday-Friday this week. They are feeding us lunch each day. Yesterday for lunch we had home made perogies, onions with butter, suasages, buns, tossed salad, and home made apple pie. It was all pretty good. I don't know what will be for lunch today.

I have some leftover roasted chicken so i'll use it up in a chicken Caesar tetrazzini - so yummy! garlic sticks on the side.

I'm not sure either; might go to the cabin this evening, so prob just bbq a steak on the BBQ and have a simple salad with it...

I am home sick today (probably will be tomorrow too), so threw together some leftover ham, potatoes in a cheesy sauce and baked in the oven. I'm the only cook in the house really, so had to do something!
I'm hoping this darned cold will be gone by tomorrow, or at least subsided. My nose is like a leaky faucet and I've got an awful cough.

Today's lunch at the volunteer event was all home made again. Hot roast turnkey sandwiches, turkey noodle soup, home made bread and butter pickles, crackers, warm cinnamon buns, and refrigerated cheese cake (the whipped cream kind). It was all pretty good. The women at my function are all looking forward to the other goodies in the coming days. They are not concerned about the main course.
