    Last night was homemade tofu fried rice in the ActiFry (love that thing!), and veggie spring rolls.

    Tonight is my version of Indian butter chicken, but I use coconut milk instead of cream and tofu instead of chicken. Will serve it over basmati rice.

    Last night was tuna and dill pickle sandwiches as per dh's request. We really weren't that hungry since we had chilli at lunch.

    Maybe we will stop by the in laws and "return her cookware" and have dinner lol

    I made a big casserole of Mexican Rice with ground beef on Friday. My first time for this one. It was under salted but otherwise okay. Good basic dish for these cold winter days!

    I bought some chicken wings on the weekend; I'd been eyeing them at Costco for awhile, they're raw and fully seasoned, you just have to bake them or whatever. They were OK, but nothing fabulous. A bit too salty for me, and DS would not eat them.

    On a related note, is it just me, or are raw chicken wings hugely overpriced? There's hardly anything to them, mostly bone, but they're quite a bit more expensive than drumsticks or thighs.

    The cost of chicken wings is ridiculous. My mom used to buy them for her and my bro as a cheap dinner (I do not eat them) but now it is a treats for her to get them, they are so over priced and never go on sale anymore.

    the already cooked ones at price smart are 50c each! Needless to say we passed on those!

    I bought a roast at NF a while ago for $20.. On sale... I sliced it all up for stir fry as that's what we usually have for weekdays as it's fast and easy .. I got about 7 portions ..(6 in the pic cuz I made one up for tonite).. Each portion is enough for me hubby and DS (he didn't eat much as he's 16 mos) and enough left over for lunch. And I started to eat and forgot to take a pic
    ..

    I know a roast is not the best cut for need but if u cut it against the grain and have it marinated in a tenderizer it's not bad.

    YES!!! I totally called it! MIL called and invited us for dinner. Homemade pizza and sauce with tres leche cake for dessert. Oh ya and smoked salmon with capers,cream cheese, on homemade bread.
