I baked up a batch of chicken breasts and refrigerated them. I add chunks to salads, pastas, and sandwiches. Good lazy summer food.

Tonight, baked salmon with garlic, butter, and lemon. Made a frittata with potatoes, onion, and diced tomato.

Last night was quick and simply Nachos as nothing was taken out of the freezer,
Tonight is up in the air Mom wants to BBQ but it is supposed to rain so I guess we will wait and see.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

ugh....I escaped catching everyone's nasty dry cough ( scratchy annoying throat ) combo cold, flu?? for almost 3 weeks! The three of them were hacking up lungs here! o.k. sorry T.M.I. but NOW I get it!!!!??? Sadly though the cook STILL has to make those cabbage rolls though for tonight......no calling in sick here.

WOB, hope you feel better soon!
Tonight we had Mr. Noodles chicken soup, and frozen Co-op rising crust pizzas - deluxe for my husband, Hawaiian for me. I love the deluxe, too, but it's WAY too spicy for me. He ate his whole pizza, I barely ate three out of eight slices of the Hawaiian.

I made Pakistani Kima yesterday, which is curried ground beef, onion, tomato, peas, and cubed potatoes. Had it with rice. Yummy. I got it out of a Mennonite cookbook.
