    No dinner tonight since we were at the inlays for a family brunch with our newest nephew it was an Indian themed meal and it was delish including the mango chutney that MIL and I made a few days earlier. I brought dessert which was Julia Childs Mousse au chocolat in chocolate ballon cups.

    My DH is a certified cook, but hardly ever does any of the cooking. I'm at home full time right now, so I didn't think it fair to ask him to cook when he gets home lol. Turns out I do know how to cook, but I just don't like doing it.

    I pulled out a package of meat this morning. I'll fry it up into a taco veggie meat thing that I make. Have it with taco chips with marble cheese melted on top, salsa, sour cream, and a glass of milk.

    Anyway, when I grabbed this package of lean ground been, that's when I discovered that it is the last layer of lean ground beef in the box, so only 3 more packages in the freezer. I picked it up for $2.25/lb back in January using my saved up club Sobeys points. I currently have more frozen boneless skinless chicken breasts than anything else in the freezer. I'd love some suggestions on how to use them.

    Boneless skinless chicken breasts.
    - I bake them and use them with a deluxe tossed salad.
    - marinated chicken skewers
    - chicken mushroom sauce with pasta
    - chicken fettuccine Alfredo
    - chicken and veggie stirfry
    - chicken wraps
    - chicken salad sandwich

    We were just in PEI, ate out a lot including New Glasgow Lobster Supper, an annual treat. Only place I've ever seen lobster on a kids menu, which DS LOVES.

    Cooked dinner at home tonight, ahh! Chicken thighs, with potato and veg, our standard supper, raw veg for DS.

    A summer tradition when we leave PEI, we normally stop at one of the roadside potato stands. They are usually self serve on the honor system, put your money in the bin and take your change if needed, and your bag of spuds. This time they were wee new ones, baked them in the oven and yum yum yum!

    Chicken - put in the crockpot with salsa, taco seasoning for a few hours (not too long, breasts dry out even in the crockpot). Shred chicken, add refried beans, wrap in tortillas, bake in the oven with cheese and salsa on top.

    Angela, are you a fan of Stove Top type boxed stuffing? If so slice through the chicken breast to split it, but do not cut all the way through. Mix up a box of the stuffing but add some of your extra favourite stuff to make it more interesting ( I add diced fried onion, mushroom, celery and toss in dried cranberries ) Do not cook the boxed stuffing, just fill the breast cavity nice and tight all the way along, squeeze in as much as you can.
    Then to keep it in there I pat the whole outside of the stuffed breast with wet hands and roll it into my own homemade seasoned crumbs ( but if you like Shake 'n Bake that works too)
    Place them ( however many you make on a lightly Pam sprayed cookie sheet, bake 40 min on 350 degrees, then gently try to flip each one over to brown the other side ( cook another 15 min or so )

    Let them cool a bit to firm up and then slice crosswise for a beautiful visual of dressing and chicken!! Mmmm darn Angela, now I wanting that for my dinner! lol

    Fresh pasta stuffed with spinach and cheese for everyone else...

    ...gluten free penne with red sauce for myself...which, was amazingly similar in tatse and texture to "real" pasta for a change. (I've been buying corn pasta at Costco which is a poor substitute imo)...so thank you Catelli for making some that actually tastes like pasta!!
