    We had our usual sunday family picnic at the beach today....ahhh..nobody was wearing shorts...all sweaters today...but it was still a great time; nothing beats quality family time...a mesh-mash potluck of everything..we managed to BBQ pork, steak, hot dogs, etc with all the wind..and there was a bunch of side dishes and desserts...this is my oasis!

    Tonight Nachos to try out our Homemade Roasted Salsa, salsa is good but I find it a bit spicy (I cannot handle spicy) but mom likes it (she likes spice).

    made a 3/4 pot ( large enamel preserving pot ) full of borscht!! Oh my the aroma!! It did take me some time to grate 6 huge beets, dice up some cabbage, carrots, celery, onions and potato but once it was simmering....ahhh. All fresh herbs chopped and added ( dill, parsley, cilantro and basil ) So this turned out to be my Sunday lunch and dinner. Might even be today's too! Used 0% fat plain Greek yogurt instead of sour cream as my garnish.

    .. it's sodium night!...hoping the power lasts as we have high winds here right now...going to shake-n-bake some chicken pieces..and someone gave me some lovely potatoes right out of the garden so I'm going to cut them wedge style toss with some ranch dressing and also a little of the shake-n-bake coating (crispy chicken) and bake with the chicken..(on separate pans)..and sautee some fresh baby spinach in garlic oil...

    Ground beef meatballs in an awesome mushroom/onion cream sauce, over mashed potatoes, with salad and homemade pickled beets - the latter of which turned out really well! SO much better than bought ones!

    One of my pc deals was 400 pts for every $1 spent on meat and ribeye steaks were on sale . Red peppers are also on sale around town for .99¢/lb and Walmart has corn on the cob for .25¢ each. So I bbq'd all of it as well as potatoes and onions.

    Home made chicken salad on a toasted bagel with a glass of milk. After LO's gymnastics class he called out "icecream" as we drove past DQ. We don't live far away, so I brought him home and returned to DQ to get my favourite blizzard...which I shared with LO. It was funny because I only remember him calling "icecream" to the DQ sign once before (earlier this month). He just turned 2yrs old.

    Tonight with be steak and mushrooms in gravy over egg noddles. Have some mushrooms that needs to be used up, can use the simmering steak I found in the freezer on the weekend and hopefully this will make it a little less noticeable we are running low on beef products. I am trying to spread the beef out to hopefully by myself a couple more weeks before it is noticed we are low or out of beef.

    leftover ham with potato salad, macaroni salad, and whatever else is in the fridge that can be added to all this. Apple crisp for dessert.
