Ribs for us. I cooked them slowly in the oven last night, wrapped tightly in foil with some seasonings. I put on some bbq sauce and put them in the fridge. I was going to grill them but too damned cold, will put them in the oven on broil to get a bit of a browning.
Doing baked potatoes, since sour cream was on sale and I had coupons, so lots of sour cream in the fridge!

Took chicken breasts out of freezer last night so going to season them up and bake in oven. Veggies, rice and salad as sides. The only good thing about early morning hockey practice is it gets me up early and I have time to prep in the morning

Late last night I boiled a double pack of Italian sausage filled tortellini ( fresh ) and then decided to make my own " white sauce ". Well really I just melted 3 bricks of Philly, blended in a fair amount each of powdered Romano and Parmesan cheese, since the mixture was warm enough I tossed in Parmesan Petals to melt as well. Placed fresh garlic, lots of chives and basil into the mini grinder, added all that and continued to warm everything on the stove. Added nearly a whole carton of coconut/almond milk to thin it out some, sprinkled in onion powder. Tossed in 1/2 bag of frozen sweetlet peas and I called it a white sauce shortly after that. The guys seemed to eat and not talk so I know it must be good. I'll have mine later today.

^mmmmm...that sounds goods...I'm still at the hospital these days..I feed my dad his meals now, he really only eats a few spoonfuls of soup or something light..so I usually try and grab a bite to eat then to boost his moral and have someone to eat with. Food is no shortage; I'm very thankful but it gets annoying when a doz. people try to feed me at one time and I'm not hungry..lol..,see what today brings

KelJo, hope you're doing ok, I've been in shoes very similar.
Tonight we had leftover ribs (just a few), some frozen potato skin things by TGIFriday at Costco awhile back, they were just ok. DH is hungry again so he's having a few nachos with guacamole I made a couple hours ago.
For tomorrow I'm putting potato soup in the crockpot. Fortunately I noticed the water company pulling up earlier, prepared for a water issue, fillled up the water cooler (we use tap water and a filter) - sure enough, trucks and jackhammer outside, no water inside. Hopefully it will be done by morning.

We had chicken too. Spiced it all up this morning and put in the fridge. Had my teen put it in the oven with hash browns. Used up leftover pasta- tossed in a pan with olive oil, pepper, garlic and a bit of cheddar. DS And friend ate it all! Heated up a can of corn and a bun from the freezer. A bit of this and that and dinner was served!
