I'm roasting a picnic ham from NF, $1.47/lb right now. I think we will have it with the leftover carrot sticks and cauliflower from last night. Cook up some potatoes, coleslaw, and maybe some other veggies. I always love some canned pineapple with freshly roasted ham. yum. I'm also hoping to bake more fruit muffins for LO because he ran out yesterday.

How about a sandwich with chicken strips, mozza sticks, and bacon. Topped with cheese, tomato sauce and hot peppers on a toasted bun. Or is that not a good idea lol.

^ sounds like a great single man's meal, cabbie - my son comes up with odd combos all the time!
Tonight, he's coming for supper, so I'm making meatballs in mushroom sauce/gravy, mashed potatoes, peas, and salad.

Tonight will be mostly leftovers from last night, which was the plan. Roast picnic ham, scalloped potatoes (new recipe, not sure that I would make it again without making more changes), coleslaw, boiled mixed veggies, possibly canned pineapple, and milk.

If only I knew what to make tonight, I need to find something I can make now and eat but Mom can reheat later when she gets off but also is not too heavy as won't be home until after 7. Right now I am tempted to skip dinner and just go to bed. Hopefully something will jump out at me when I get home, if I go into the stand up freezer it may literally jump out at me as that freezer needs to be cleaned out.

My wonderful man is making me a special dinner and making it "healthy" I suggested he use up some of the Kale I bought on the weekend. I'm guessing it will be a veggie pasta with shrimp
