Dumplings...*drool* My family isn't a great fan of them, but I love them! I remember making a stew last winter that DS really loved. I was so proud of my delicious dumplings until he asked, "What are these globs?" lol - for the record they were good, he just does not like dumplings.
Tonight is leftover ribs and/or chicken I cooked today, and sliced some potatoes on my mandoline, boiled a bit, now am baking in the oven with olive oil, salt and pepper. Will have broccoli and carrots with it (raw for DS, cooked for us).
I also sliced up some sweet potatoes to do the same thing, but not tonight.

Last night was Pasta Bake. Since I was home all day I made a huge batch of sauce with very little meat but tons of veggies so I have three containers to go into the freezer for dinner at a later time.
Tonight is burgers with roasted potatoes. Nothing fancy but I have seriously been craving a burger lately and since we are cutting back on our eating out going to have to be a homemade one which is great because they are better.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

still living out of a suitcase but invited to friends for dinner, they ordered in Chinese Food and it was delicious, 10+ different dishes, yummy

oh my. I've been SO spoiled these past two nights that I'm never gonna wanna cook again. Ever!!
last night we celebrated FIL's birthday bash: caesar salad, broccoli salad, veggie tray with dip, nachos with dip, big fat sirloin steaks done on the BBQ with fresh sauteed mushrooms (omg....SO GOOD!!!), and chicken alfredo with chocolate pecan brownies and cherry cheesecake for dessert.
Tonight, we celebrated my family's thanksgiving which is a potluck deal-- everyone brings one hot dish and one cold dish so I got to choose from homemade sweet and sour meatballs, lasagna, pizza, sausage and sauerkraut, glazed root veggies, garlic bread, casear salad, pickled beets, regular lettuce salad, veggies and dip and then a plethora of desserts including Dutch apple pie, regular apple pie, cheesecake of 4 different flavours (chocolate, plain, raspberry, apple crumble), cherry danishes, and chocolate chip cookies.
omg. All of it was so tasty...and I'm gonna have to run for a week solid to work off all the over-indulging i did.lol.

DH cooked one of the prime Rib roasts from the freezer, I will be sad when they are all gone. So darn delicious! Roasted taters, green peas and some pickled beets on the side.
