I had full intentions of cooking tonight, but before I started, husband came home with takeout. Boneless dry ribs for him; chicken strips, steakcut fries, and Caesar salad for me.

last night's dinner was a whack of various Chinese food dishes from our local place. I doubled up on all the veggie dishes to ease my guilt! The shrimps were so plump!! Mmmm

What a week:
Monday we had Nachos for Lunch since we were both home at 3 pm therefore there was no dinner that night
Tuesday Egg Sandwich with Homemade Hash browns
Wednesday: Stuffed Turkey Breast (stuffed with homemade potato stuffing, only kind I eat), mashed potatoes, gravy and candied acorn squash
Thursday: A Turkey Shepard Pie so to speak, sliced up stuffed turkey breast placed in a casserole dish, covered with leftover gravy and topped with leftover mashed potatoes
Friday: Mary Brown's, gotta work on this by Friday we do not want to cook leftovers always seem to be gone so we end up having take out.
Tonight is a mystery, Mom is working so Dinner is up to me, will go downstairs soon and stare into the freezer to see what protein jumps out at me (knowing our freezer right now it may just literally jump out at me) and work from there.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Been living out of a hotel for the past week but at least it has a small kitchenette..mostly been eating take-out and leftovers but we're suppose to be going to my cousins house this evening for a BBQ , however, with Hurricane Gonzalo on the way a.k.a Tropical Storm Gonzalo by the time it reaches us here in St John's, NL the bbq may have to changed to something else. Maybe just pick up a couple of extra large pizzas and paper plates

For tonight I've put back ribs into the crockpot, rubbed with seasonings last night and wrapped in foil with onions before I put them in the crock. Won't leave them in all day, I like them with a bit of 'bite' rather than falling apart.
I have a bit of buyer's remorse, the 'sale' at Superstore where i bought them is about the same as regular price at Costco. Oh well.
