I'm very pleased with myself because for the last few weeks I have 100% committed to making ALL meals from breakfast to dinner at home and I have stuck to it. I've made all meals and come up with weird meal combos to use up ALL the leftovers!
I made roasted potatoes with butter/evoo that I infused with loads of garlic,Rosemary and red chili flakes. Those leftovers are currently being made into a super delish potatoe soup (yes it's not even 9am and the whole house smells like garlic :P:P).
Last night I took my PC Naan out of the freezer and made pizzas. I made two kinds. One was a tomato,basil and fresh mozzarella and the other was a spicy Italian sausage (on sale at independent so I stocked the freezer up). With caramelized onions and again the amazing fresh mozzarella. I also made pizza sauce (4 cups worth) for 99C instead of the tiny can for $1.99+
Lastly I made the most delish BBQ burgers earlier in the week with German potatoe salad.

Yummy! That is a beautiful burger. :hungry: And way to go on the homemade meals! I have been trying to get there too. But baby steps compared to you. I really love to cook especially for others, plus it totally helps with schedule and some structure which I have been lacking lately and missing!
Tonight is gonna be a simple meal and something that i have on hand. Maybe soup and grilled cheese or Busch beans and wieners. I love what I lovingly term "welfare meals" once or twice a week. :top:

another bbq this evening...I had the busiest day...but still managed to bbq chicken , sauteed carrots, brussel sprouts, onions & mushrooms together, mashed potato, and tried these jarred beans that bake right in the glass jar in the oven (remove lid of course) they were good over the mashed potato
Meatloaf and scalloped potatoes
fried pork loin, salad and rice.
Oh, gosh, all the above meals sound so yummers!
Supper tonight is pasta in mushroom sauce. I broke up three frozen burgers into small pieces and fried them up with the white ends from green onions - so mixed in with the pasta, it's really good. Served with simple salad with Caesar dressing.
I ended up busy til about 8:30pm and just had a side order of Greek potatoes. I am not complaining, they were pretty tasty.
My Instant Pot arrives today, I'm hoping to give it a go tonight with some pork chops or chicken thighs I have in the fridge. Let's see if pressure cooking is all it's cracked up to be! :)

Tonight we are on the run so pulled leftover chicken tet from Friday night (put in Tupperware container in freezer) for one DS. Chicken burgers cooked and ready in fridge for other DS.
Quiche, Coleslaw, Tomato Soup
I have bbq chicken leftover from yesterday's dinner but I'm also making my own burgers and grilling...so hamburgers & chicken for dinner...and if the smell can entice a few friends to drop by I might just sit on the deck with a bottle of wine and watch the sunset..I have a craving for a burger with balsamic onions and goat cheese....mmmmmm...sounds like a plan :)
