I am really jealous! I love elk and any type of game meat!

I made turkey soup from the left over christmas bird!

it had the Catellie Healthy Harvest Pasta, reduced canned tomatoes, Knorr Broth, leftover turkey, reduced Polish Sausage, onion, celery, garlic. then i made some bisquits! IT was my frugal soup that will feed us for lunch today as well

when in doubt of what to do with any roast, i practice the big three: Booze, fruit, spice.

you cant go wrong with this. dump some wine, beer, or liquor, then baste in any kind of fruit, (apple sauce, raspberry jam, peach preserves, frozen juice or fresh fruit like pears, apples, oranges)then toss in a spice. season to taste! don't measure anything. go with your intuition.

you end up with a "god knows what" kind of flavor that is wonderful! its different every time too!

a nice one with pork is strawberry jam, white wine, thyme. another good beef one is beer or wine, frozen orange juice, garlic. roast till almost done then take off lid to let sauce reduce and allow caramelizing.

makes a great sauce that is nice with baked potatoes and buttered peas.

This is a great thread - with 2 kids (one very picky), a husband on perma afternoons and working, I am constantly struggling with dinner ideas! I've been going thru some past posts and now have some good ideas to get me out of my rut!

Tonight is ribs, corn and baked potatoes!

Last night was oven roasted ribs and rice (with some Epicure spices on everything, lol...did I mention that I just started selling with Epicure Selections?).

Tonight is pan-fried fish with oven roasted potatoes (with Greek seasoning), and Greek salad.

Oh, you're a sweetie - that's how I cook!! Hm, wonder if I can find a beer around here, no other booze ... The only thing I am concerned about is that it's an inside round roast, so to cook it longer to be tender...

    Thanks for the ideas!

I had a nice piece of pork tenderloin. I tenderized the sheit out of it and made it nice and thin, and I rolled it with stuffing. It's now cooking in the oven, and it smells great.
I might do some baked apples too.
