Since we could use our oven today (totally loving the cooler temperatures) we are having Roast Beef, Roasted Cauliflower, Mashed Potatoes and Gravy

Such a beautiful day here. Had family over, grilled rib eye steaks, new garden potatoes with cream and dill, sautéed mushrooms and Caesar salad. An assortment of ice cream treats for dessert, drumsticks, revellos, fudgsicles and creamsicles.

Neither of us were well enough to cook yesterday, so hopefully the chicken soup will be made tonight.

^ hope you're both feeling a little better today
its pouring rain here today and humid ...made rice earlier to make fried rice later with lots of veggies and will probably put a few wings in the oven although its a little warm for the oven but 10 deg overnight so no problem to cool down later

Thinking of trying to make Lemon Garlic Quinoa in the Instant Pot with Chicken and Mixed Marinated Veggies to clean up the fridge a little before grocery shopping tomorrow. Hoping the rain holds off and I will do the chicken and veggies on the BBQ if not might have to use the toast oven as it is humid here.

i volunteered at VBS for 4hours today and came home to a plumbing disaster. I’m making a chicken stir fry but dinner will be late since Im still waiting on the plumber.

We’ve got leftover stir fry from last night so I’m making pork fried rice to go with. We are going out for drinks after pickleball tonight, so we will most likely have appies there late tonight.

I ended up turning last night's dinner into a Salad to stretch it out so we had Lemon Garlic Quinoa with Marinated Chicken, then used the same Marinate on the Mushrooms, Zucchini & Pepper which I cooked on the BBQ in a grill pan over Ice burg lettuce (as my leaf lettuce had gone bad). I also thinned out the marinate with some water and coil to use as a dressing.
Tonight I have no idea it is Mom's day off so I was hoping she would be making dinner but now she is out with a friend and it sounds like I will get home first so guess I need to come up with something.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I plan on making a shepherd’s pie tonight. I made extra mashed potatoes last night and the ground beef is thawing in the fridge. I think I’ll offer sliced cucumber with it too.
