Husband too tuckered out to cook, so ordered takeout. He had veal Cordon Bleu, I had Greek ribs.

Been awhile but we have been eating at home:
Friday night was Sausage on a Bun with Homemade Potato Chips done in the oven
Saturday Night was Ravioli Lasagna, I used Spinach and Cheese Ravioli instead of lasagna noddles, made my own tomato sauce with a nice mix of spices and added some mushrooms since we were going meatless and layered with a Ricotta Spread (Homemade Ricotta, Eggs, Spices and Parm) and Mozzarella Cheese
Sunday Night made Butter Chicken to use up some leftover rice we had the fridge that we needed to use or would have to be tossed soon
TONIGHT: Dinner at Cousin's House which his Wife and Kids so whatever is made I will eat2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Homemade curry butternut squash soup. I purées it with a stick blender and added coconut milk. It’s thick and spicy. Phoned dh to bring home fresh baguette.

homemade roasted red pepper/cauliflower soup, with a nice kick! ( ty Lynn49 )
I just used a large jar of roasted red peppers that were packed in water, saving the mess of roasting and peeling.
Bell Pepper Cauliflower Soup Serves 4, Serving size: 1.5 cups
Ingredients: 2 large bell peppers, stemmed, cored, halved lengthwise and pressed flat. ( Red are best )
4 tsps olive or grapeseed oil
2 shallots, peeled and chopped
1 tsp sea salt
1/4 tsp cayenne pepper (or smoked paprika if you want less spice)
4 cups chicken broth
4 cups cauliflower
1 tsp sweetener
Fresh ground pepper to taste
Directions:
1. Preheat broiler to high. Arrange bell peppers skin side up on baking sheet. Broil until skins are blackened, about 10 minutes. Remove peppers from oven and let cool. Peel over a bowl to collect juices; set peppers and juices aside.
2. In a large pot over medium-high heat, warm oil. Add shallots, salt, cayenne pepper and cook about 3 minutes. Add broth and cauliflower. Bring to a boil, then lower heat to a simmer. Cover and cook 20 minutes. Add peppers with juices and cook, covered, 10 minutes. Purée in a blender and add sweetener. Add pepper to taste.
3. Serve hot or cold, garnish with oil, chives and lemon, if you'd like

Probably some sort of Take Out, I am heading back a night early due to incoming weather but won't get home until late so will probably grab something on my way into town.

..strip loin & prime rib steaks were on sale yesterday for 50% off so stocked up the freezer...having pan seared strip loin with butter, garlic, thyme, S&P, mushroom & onion..fried rice with lots of veggies, a small baked potato with butter & sour cream & fresh dinner rolls

Today is not looking like a nice day, serious wind and snow is headed our way so thinking I might put on a pot of Beef Stew with potatoes and carrots.
