...hoping to go to the cabin this weekend until at least Monday...doing a big cook this morning for the freezer ..I'm making beef stew, chili, chicken fried rice, honey garlic ribs, corned beef meat cakes & blueberry muffins...once things cool I put the food in larger freezer ziploc bags and flatten it out where possible & freeze, it all fits perfectly in the cooler, so lots of decent food for the weekend that will just need to be reheated on the wood stove

Using the chicken I cooked in the crockpot yesterday I am thinking quesidias (sp) since we have everything else on hand. And lots of sour cream to use up (family left for Florida and I got their fridge contents
)

I cooked a whole chicken in the Air Fryer this afternoon. The skin was all crunchy and golden brown....( figures.... I can't have that yummy part! ) but I diced up most of one breast and made up chicken salad, had it on low carb crisps.

Again, I am not sure if Mom will be home for dinner tonight (she may have to work late again) so I am thinking Taco Salads, easy enough to re heat later but can have everything ready so it just assemble and go.

I will be lurking, salivating, and generally being jealous of all your meals.
(I'm in the hospital, generally the food is edible. Some things they do really well, some obviously not...
I will be in for quite a while, came in 10 days ago. My son and husband rescue me with tasty food once in a while!)

doing up another whole chicken in the air fryer. This one is a bit larger so it will take longer I expect. Cut up some russets into wedges and got them done first, they cook pretty fast! This stuff is for the hungry guys getting off work.

Back from the hospital after the same lung collapsed again. First one only lasted one day, this one seems to be ok at about 2 days
Tonight the wife is making wild rice and chicken soup.

Last night was BBQ steak, roast potatoes, garlic spinach and fried mushrooms.
Tonight is ham, sweet potatoes and cauliflower.
