tonight will be leftovers of last night's dinner.
i experimented a bit and the results were SO tasty!
cooked up a pot of whole wheat rotini.. once cooked i drained and added a splash of olive oil, a few spoons of fresh grated parmasean and about 1/2 grated light extra old cheese. Once the cheese melted, i added a whole can of flaked tuna (drained), 2 tomatoes (chopped), and 2 big handfuls of baby spinach. Covered for approx 5 min to let it all cook. Squeezed on the juice of 1 lemon then served. MMMMMMm MMMMMMMMMm GOOOOD!!!

This week bf and I have been bad..very bad and been eating out every day LOL I don;t feel like cooking and he can't bc of his hand. So tonight were taking advantage of the MC D's coupons we received in the mail.
BUT as of Monday my mom is visiting and she already has prepared stuffed peppers, cabbage rolls, Serbian cheese pie, her award winning meat sauce and I can't remember what...so I can't wait to eat her yummy food! hehe

my hubby made pizza dough yesterday using his fav. chef, Anton Brown's recipe (food network). It has to rest for 24 hrs. So today he's going to make cheesy pepperoni pizzas - his fav. toppings!

Peanut butter baby back pork ribs on the BBQ!!
These are pretty good! My friends always beg me to cook some!
1 cup Creamy peanut butter
1 cup chicken stock (preferred homemade)
1/2 cup unsweetened coconut milk
2 tbs soy sauce
2 tbs fresh lime juice
1 tbs thai chile garlic sauce, such as sriracha, or 1 tbs of your favorite hot sauce
1 tbs minced peeled fresh ginger
3 cloves garlic mince
1 scallion, both white and green parts trimmed and minced
1 tbs brown sugar
freshly ground black peper
2 racks baby back pork ribs (4 to five pounds total)
garlic powder
1/4 cup finely chopped fresh cilantro, for serving
In a saucepan place the peanut butter, chicken stock, coconut milk, soy sauce, lime juice, chile garlic sauce, ginger, garlic, scallion, brown sugar, and 1/4 tsp peper. Gradually bring to a boil over medium heat, whisking to mix.
Reduce the heat and let simmer gently until thick and richly flavoured 10 to 15 minutes. and remove from heat. you can add more seasoning if required.
Cover the ribs both sides with peper and garlic powder to taste then cover them with half of the marinate from above.
Refrigerage ribs for 4 hours minimum.
pre-heath BBQ 325 to 350 degrees
cook for 45 minutes then re-apply the sauce then cook for another 45 minutes. Dont forget to basting them 2 to 3 time
poor the remaining sauce on them and serve!!!
Note: the coconut milk, garlic chile sauce are found in the thai section of grocery store.
