What's For Dinner?

Yesterday we made individual pizzas with naan bread for crusts. We also had sliced apple and cucumber.

Today I had chicken veggie soup with pearl barley. I also baked healthy banana oatmeal chocolate chip cookies and apple crisp. Great addition to lunch kits.

I ended up doing 2 rides today plus my strength training etc because our peloton bike shoes arrived and I was too excited and wanted to try them out so it truly was international night tonight. I sautéed some mushrooms, onions, garlic with a Tex mix seasoning and threw in some beyond burger patties with the leftover roasted sweet potatoes and spaghetti squash and made a wrap with a hash brown and some just egg.

Sooooooo good and used up the odds and ends in the fridge.

Monday night Mom had suggested Enchiladas but we were out of Tortillas, I went shopping yesterday and they had Tortillas on sale so I grabbed 6 packages (they freeze well)

Last night I made Chicken Enchiladas with Shredded Chicken, Onions, Peppers, Mushrooms and Cheddar Cheese with Homemade Enchilada Sauce.

I made a HUGE pot of split pea and lentil soup so leftovers is on tap for tonight with a side salad.

Last night we made Homemade Pizza with the usual suspect: Pepperoni, Mushroom, Onions, Bacon, Cheddar & Parm

Tonight is a mystery so far.

Tonight we had spaghetti and meat sauce.

Tomorrow we’re having taco salad.

Last night we had Spaghetti & Meatballs in homemade sauce and pulled homemade meatballs from the freezer.

Tonight, I am thinking maybe a nice soup, it is a cold dig out from last night's snowfall type of day

some cafeterias serve this soup and it is wicked good; i do have to add extra cooked chicken for my hubby

Tonight we are going to try Lemon Chicken Orzo Soup and we have some leftover Dinner Rolls from earlier in the week I will serve on the side.

I must say you ladies post such scrumptious dinner options it's tough not to get tempted. Mmmmm, that lemon Chx orzo soup? perfect for this new snow dump we have.
I am having the " whole enchilada " tonight for my dinner. By that I mean a full individual sized pizza made with the 2 ingred. dough recipe.
Normally I split these circles in half but I've saved many calories today and can top this pizza with a lot!
A scant Tblsp of sauce on the bottom. Both Bocconcini and Ricotta cheeses, turkey pepperoni slices, diced green onion, red pepper, sliced Cremini mushrooms and 2 black olives, sliced.
My sides are 2 large shrimp with sauce, coleslaw with bottle dressing and hummus with veggie sticks.
Best part is I still have enough calories left to enjoy my sweet snack later tonight!

Splurged last night with a lime and jalapeño beyond burger from A&W since we both had super long days at work. BTW it was oh so good. Nice and spicy!

Not 100% sure about dinner tonight so I’ll have to flip through my cookbooks and dig around in the freezer and pantry.
