What's For Dinner?

I am craving Cheesy and Pasta, so many options we could make but landed on:

Lasagna with Garlic Bread and maybe a Caesar Salad if I go wash the Lettuce. Going to be honest, right now the likelihood of the lettuce being washed today is low. I woke up feeling great but as the day goes on, just not feeling my best so we shall see.

It was a clean out the fridge dinner. So bits and baubles it was. Roasted sweet potatoes, onions and garden with pan seared spiced tofu and gardien tofurkey cutlet’s. I needed to clear out the freezer a bit too. At the last minute I tossed some fresh spinach down too. Nice and balanced.

Tonight’s supper was honey/lemon pork ribs, noodles, steamed California veggies.

Monday’s supper will be taco salad.

Tonight we will make Smothered Pork Chops with Mashed Potatoes and thinking I will make Roasted Lemon Asparagus and Roasted Broccoli on the side.

Last night was cinnamon toast since we were still full from lunch.

Tonight I’ll be making a sautéed mushroom, onions, garlic in a cashew cream sauce over rice. I’ll also add the last of the fresh spinach in the fridge. Also a side salad.

Happy St Paddy's Day!!! Yesterday I made cabbage, salt beef dinner (with pork roast, gravy, puddings, potato, turnip, carrot, etc) so there's lot of leftovers for today. I have no plans on cooking much today. All green beer from here! LOL. Unfortunately, we have a major covid outbreak in our area ( our first one!) and most restrictions were dropped on Monday so St Paddy's celebrations are going ahead everywhere (super spreader events!) I'll just be staying close to home with a few close friends. Cheers!

Tuesday was pork steaks, fresh mushroom sauce, egg noodles, mixed salad.
Yesterday was all oven baked fish sticks, French fries, onion rings, tossed salad.

Last night I ended up making Dahl over rice. Sooooo flavourful and fast plus Dh loves it so it was a win win. I added shredded kale at the end to take it over the top.

Tonight is up in the air. Dh will take leftovers of the dahl and the creamy mushroom pasta for his lunch tomorrow so need something different for tonight.

I’ll be making tofu feta today so I might end up with roasted potato and kale Caesar salad with tofu feta.

Tonight was leftovers, we had a lot of littles odds and ends in the fridge so we just took what wanted. For me it was leftover Lasagna and I made a Garlic Bun to go with it.

Chicken Tetrazzini, we used to have this all the time when I was growing but now we do not make it often.

We found some cooked Chicken in our freezer that we took off a whole cooked chicken, we will use this to make the Tetrazzini. So nice to get a few odds and ends out of the freezer as we found 2 different packages from 2 different chickens.

Tonight we are going to make Homemade Pizza with Caesar Salad

I ended up making a big pot of soup using some odds and ends. It was sooooooo good.

I used:
onion
garlic
carrots
mini potatoes cubed up
small diced tofu
better than bouillon no chicken chicken stock (plant based)
Chili powder, pepper, cayenne
can of nibblets
finished off with shredded kale

It was so good and have plenty for lunch today
