@Angela273 Happy to post this! I turned my DS and DH onto this delicious dish years ago when I used to buy it from the Barrio Fiesta place near work. Of course the price kept going up on their take out meals so I bugged a Filipino friend until she relented and gave me this recipe.
This recipe makes 3 times the sauce ( to cook with 12 x skl/bnl chicken thighs ).
We like extra sauce spooned over our rice or noodles.
Chicken Adobo ( gives you 3 times the sauce )
12 skinless boneless chicken thighs
oil for cooking
3 onions, thinly sliced
1 1/2 cups apple cider vinegar
3/4 cups soy sauce
3/4 cups water
12 teaspoons honey
12 cloves garlic, chopped
6 Bay leaves, 2 Tblsp peppercorns
Heat oil, brown the thighs on all sides, transfer them to a bowl. In same pan add onion, cook for 3 min.
( scrape up and stir in the cooked bits from the pan from the chicken and now the onions, makes great flavour )
Add AC vinegar, soy sauce, water, honey, peppercorns and Bay leaves, bring to a good boil then place thighs back in pan.
Cover and simmer on low 25-45 min, flipping thighs half way through. ( I always simmer for the longer time ).
Remove Bay leaves, serve over steamed rice or boiled noodles.

Various flavored(maple,cheddar bacon and white wine shallots) sausages served with homemade fruits ketchup chow chow si bon and with mashed patatoes and a salad(garden salad or ceasar ,not decided yet)

Tonight I am making Dutch Oven Chicken and Vegetables. It is Chicken with Carrots & Mushrooms in a Cream Sauce in the Dutch oven which I will serve over Mashed Potatoes.
It was snowing when I picked this meal and just seemed like a good snowy meal.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

lol!!! AGAIN....DH is making pasta !! Make what you know I guess. His pasta with meat sauce IS actually always so good, but as the main chef here I would feel horrible serving them the same thing repeatedly. I'll survive.

going to try making siu mai (steamed pork & shrimp) for the first time - a dim sum dish.
figured this dish is similar to wonton so can't be too hard right?

Cheated on AW with a coupon(burger and fries)

Shake 'N Bake pork loin pieces ( cut from roast ) , oven roasted carrots, red pepper, zucchini and cauliflower. I really wanted to make Hassleback spuds but ran out of umph!
There is still time, maybe I'll get a recharge after I rest a bit.

we did a large grocery shopping today, got a eye of round beef at freshco ($3.97/lb) and i already trimmed and portioned it into 3 meals. Hubby will be in charge of making dinner: beef steaks, KD (our daughter's request), and cavendish wedge fries (the large bag is currently on sale at RCSS $6.97 and GT too). Maybe carrots or corn as another side. I can't decide yet.

made beef fajitas using some more of the portioned raw beef, frozen sliced bell peppers from our freezer, already have tortillas and sour cream too.
we're trying to eat as much from our fridge/freezer before we go on vacation

Yesterday we cooked off two small roasts and tonight I am going to use one to make Shepard's Pie with Mushroom Gravy. I also have a batch of Dinner Rolls in the breadmaker to go with dinner, YUM!!!!
