Big old batch of pasta salad filled with spinach, cucumbers, sun dried tomatoes, artichokes, black olives, last of a red pepper, red onion with a lemony Greek tofu crumble that I made and a splash of red wine vinegar, evoo and some Greek seasoning and garlic.
That will most likely be dinner tonight as well.

Thinking tonight will be dumplings with Homemade Chicken Fried Rice and Rice Wine Vinegar Cucumbers.

DH went on his spaghetti with meat sauce journey again. He sure does make it nice, so really no complaints there. However, when he does crave a feed of the stuff price is no object! ( cringe ) . We had no spaghetti pasta in the storeroom ( but every other variety...argh! ) so he drove to WM and paid $2.67 each for 2 pkg's for the stuff. There was enough made for dinner last night and then some. Leftovers for days. Silver lining? I don't have to cook now.

surprise! The pasta DH made is all gone ! This week they took 2 large feeds of it for their work meals, I had a small bowl of some for lunch on Tuesday.
Last night I made up a small batch of 7 layer taco sauce/cream cheese/grated cheddar and diced veg topping. Just enough for each of us to have a portion
with Tortilla Chips. DH prefers to spread his on Breton crackers.
Blue menu burgers will be their work meal for today, DS is cooking them up which takes that job out of my hands....so all in all it's been quite an easy week for me.

Early this morning I was out in search of a specific Glade spray item, which turned into a large grocery shop at FB afterwards. Jumped on 2 bags @$3.00 apiece of green peppers.
These were on the damaged rack but were so firm? Also marked down were 40% off of pkgs. of stir fry beef steak, so I grabbed 3 of those. Want to use these up soon, so I'll be making a beef and pepper stir fry number for " whenever " ? Making a small batch of rice to go with it. We enjoys love these types of dinners.

I was in a cooking mood today. Made cheesy cauliflower soup for lunch and beef korma for supper. Still have to make the rice and the raita. First I went to the Hutterite veggie truck and bought fresh peas, onion, potatoes and cauliflower-not cheap but it is fresh and I am supporting local.
Hubs bought a new carpet cleaner and was trying it out so I had to get out of the way.

Getting back in the swing of this dinner thing, will it ever become easy (probably not in this house LOL), tonight Mom choose French Onion Pasta Bake (Better known to some as Adult Mac & Cheese) and I will make a Salad on the side.

had a dinner sized salad with romaine, croutons, dried cranberries, shelled pumpkin seeds, feta cheese and Kraft Raspberry Vinaigrette Dressing. Was all out of my black kalamata olives. DH did his own version of a basic Caesar. Then we had pineapple upside-down cake.

On a mission to cook nice meals and use up freezer stuff.
Tonight is roasted chicken with salad and will whip up some veggies/potato leftovers.
