tonight I'm making portobello mushroom burgers! marinading them in the fridge for a couple of hours today then throwing them on the grill with some swiss cheese and aioli... scrumdiddlyumptious. hopefully. on the side I'm thinking of making some sweet potato fries with just olive oil and chili seasoning.

Think its called Mixed Vegetable Thai Curry..or something like that!
Anyway, its simmering away in the crockpot as i write this - oh and i picked up some corn today so may make that too and serve it with lashings of butter - yum
Actually it'll be marg(becel salt free!) but it just doesn't sound as great if i say served with lashings of marg........
Anyway blueberry and pear muffins to finish with.

We had:
RUSH-HOUR PORK STIR-FRY: Prep time:23 minutes, Cooktime 12min
1lb. pork (any cut cut into strips, not chunks, we use 4 thincut pork chops)
1 bell pepper, any color, cut into strips
1 pkg. snap peas
1pkg. brocolli slaw mix (1.49 at Walmart)
1/2 tsp garlic powder or salt
2tbsp. soya sauce
1/4 cup Kraft Signature Asian Sesame Dressing
In a large skillet, sprayed with Pam or in 1 tbsp oil, stirfry pork strips on med-high heat til cooked thru and lightly browned.
Add all veggies *(see note at bottom) and stirfry about 5-10 mins til heated through.
Stir in dressing, garlic powder, and soya sauce...stirfry on MEDIUM 3 minutes or so til heated thru, stirring occassionally.
Remove from heat and serve.
**I like to add my broccoli slaw and stirfry with other veggies, but the recipe can be made where you only stir in the broccoli slaw when you stir in the sauce stuff and heat 3 minutes only for extra crunch.
ALso, we are a family of 6, so I always double this and have leftovers the following night. (Sometimes we double the sauce anyways with above recipe to make it extra saucy)Last edited by Litesandsirens911; Thu, May 20th, 2010 at 09:45 PM.
