Just me tonight, my husband and son are off hunting Canada geese and duck for Thanksgiving! I am going to copy gracesmommy and make a western sandwich! They call then Denver sandwiches here in ALberta. Weird.

Tonight was those frozen cubed hashbrowns that I mixed with shredded cheese ,hot sauce, S&P and an eg to bind that was then packed into my mini loaf tin that was preheated to 400 degrees. Baked til hot insode and crusty on top . Next time I will add bacon .
I served it with roasted chicken and sweet taters roasted with fresh rosemary and garlic

I made a ham stirfry thingee - sauteed onion, celery, mushrooms and carrots with small strips of ham (first time having the Eating Right ham from Safeway - it's great - tasty and lean). I spread leftover potatoes and onions on a baking sheet, and heated them up with mozza on top for the guys; I had some plain macaroni.

Tonight is dinner out night...were thinking sweet potatoe burritos from our fav burrito place or maybe Veggie Burgers from Jack Astors.

I made a creamy potato/leek soup and also have a tray of scalloped pototes in the oven, not sure what else I will make with that. Actually maybe that will be all I make. I have some beets leftover that I can heat up with that and a few roasted onions.
Made whole wheat penne with homemade tomato sauce for the kids.

chicken breast in the crockpot with cream of mushrooms soup on it. then stirfried zuchinni/peppers/tomato and onion. YUM!

My boyfriend works night shifts so when I wake up he's sleeping, and when he comes home from work (2:30am) I'm in bed. Today was a nice surprise...he cooked me soup! He never cooks soup!!! And it's really good, creamy veggie soup! I think he misses me lol

Oy, cabmonk, hopefully you can have something more substantial later! I've had popcorn for lunch, but not for supper!
Tonight I made eggs for supper. Son came home later, so I scrambled his with cheese.
For my husband and me, I made them over easy -
(hi, vesper!) - yeah, really easy - hot and soft, a little gooey, very fulfilling...

I had popcorn too must be the moon or something. Then I had snacks of cheese & grapes later.
