Last night was noodles and veggie stirfry, with the M&M oriental party pack - awesome!

Pfft - forgot tonight - usually I make something kooky for April Fool's Day (last year was a three layer, beautiful cake - meatloaf and potatoes) - but we have food to use up before the weekend, so I'm making sausages and Ukrainian toast.

I'm going to grill some chicken that is marinating in a mojito marinade. I'll make tomato, avocado & boconccini salad with it. Oh, and grilled aspargus, my favorites!!

Last night was a HUGE bbq at one of my BIL & SIL's place since another BIL and SIL were visiting. There was soooo much food I'm still stuffed. BBQ'd pork ribs , tater salad, greek salad, veggies , dip, chips, chili, spinach dip,... you name it it was there! Don't even get me started on the beer and desserts

Now you know why DH and I went to the gym this morning

Got enough for left overs

Grilled Bass and plank smoked BBQ salmon, bbq grilled red peppers, zuchinni and mushrooms.

We went out for dinner to a new vegan restaurant in town and had Spring rolls, Water chestnut salad with peppers,tofu,almonds..and things I forget. mint! Stir fry & Lemongrass tofu with jasmine rice. Twas good!

Easter supper tonight because DH has to head back to the city tomorrow for one last week of school.
I was up early making cabbage rolls this morning, so they are in the oven. Also, escalloped potatoes with swiss cheese, honey mustard glazed ham, mashed turnips, dilled carrots, and for dessert...mini cheesecakes made with real vanilla bean Its going to be yummers!

I am steaming a 5 lb smoked meat brisket as we speak. YUMMMMMMMMOOOOOOOOO!! Got some nice rye bread and maybe I'll make some wedgies to go with it.

We had fish, potatoes, and corn. But tomorrow we feast!!!
