Had a bit more time to cook today, so I got decided to get more creative!:
Chicken and shrimp paella with an assortment of veggies (eggplant, peppers, broccoli, peas, onions, zucchini)
Fresh fruit for dessert: strawberries, blueberries, pears, blackberries

The way I feel today...probably dry toast and jello...with a side of ginger ale. Ugh.

Tonite we are having Chicken Stir Fry served over some sticky rice(not sure if it is the actual sticky rice but it is oh so good) ..

I missed out on making a big Sunday dinner so I made it today since today is my only day off this week. I made a seitan "ham", pan fried baby potatoes, steamed asparagus and homemade cranberry sauce (once you make it homemade you will never go back to cans!). Unfortunately I made stuffing out of a box instead of my homemade stuff and while it was okay it was not great. This meal really hit the spot though. Yumyum.

Tonight is some sort of pork casserole thingee which I will attempt to throw together shortly - what goes in depends upon what's in the fridge which needs to be used first, lol!

Macaroni and tomatoes with lots of fresh parmesan cheese. So simple, but sooooo good.

There was a Power Outage in the area at Dinner-Time, with Food in the Freezer that needed to be rescued!
Panic City!
We therefore, absolutely had to have, Chapman's "Brownie & Dark Chocolate" Ice Cream Cookies for Dinner!!!

Homemade turkey burgers with garlic,dijion,onions,cayanne,honey. on whole wheat buns and salad with cucumbers,cherry tomatoes,red onion,dried cranberries and a balsamic dijion vinegrette. YUM-O!

Made kitchen-sink fried rice last night...maybe lasagne tonight...mmm...with caesar salad and garlic toast of course!
