Last night I made salmon with a thin layer of cream cheese, then crumbled bacon, then shredded hashbrowns. It is first fried hashbrown side down , until they start to brown, then flipped so the salmon skin is down, and put in the oven at 400 until salmon is cooked (15 min or so depending on thickness). Served with green beans and a drizzle of hollandaise sauce.
Savings: salmon - free, caught in the river, cream cheese - Kraft fpc, bacon - Olymel $1.00 off, hashbrowns - McCains $1.00 off, beans - Green Giant ¢.50 off, hollaindaise - Knorr B3G1

So far this week we've had:
1) ham and veggie quiche (made two) with a mixed bean and baby spinach salad on the side. Everyone chose their own dessert item.
2) chicken meatballs with fresh ravioli (Oliveri) tossed in marinara sauce with a side of corn
3) whole roasted chicken with creamy broccoli sauce (used condensed cream of mushroom soup), veggies and side salads.
for tomorrow...we have leftovers to use up but perhaps we can go through that at lunch so I'll take out the pork loin and stuff it with spinach, peppers, mushrooms. Will make some seasoned brown rice and steamed carrots.

I made cabbage rolls this afternoon, and they smell wonderful. So we will be eating cabbage rolls, home made bread (I made that yesterday) and a cucumber and onion salad.
We all need a little sunshine every now and then

tonight was bbq'd porkchops, red/orange/yellow peppers + onions + mushrooms in a tinfoil boat on the bbq, broccoli and sidekicks noodles. i ran out of minute rice and had to make long grain rice for myself. i never use it unless in soups and stuff and i totally bunged it up. so runny and hard. blech.

Veggie patties (a different variety), veggie sausage links, mashed potatoes, baked mushrooms, lentils, sliced tomatoes, creamed corn (the no salt added kind). I thought I made enough for leftovers tomorrow. Apparently, I was wrong
