last nights meal is worth mentioning I think. DH joined DD and I in our GF eating, so I took full advantage and made a 9 x12 pan of lasagna using the oven ready rice noodles, the No Salt added Irresistible brand tomato sauce jazzed up with lots crushed garlic, diced fresh sage and basil, and some Mrs Dash seasonings. The layers were noodles, large leaves of fresh raw spinach, paper thin slices of sauteed chicken breast, sauce, mozzarella, slight sprinkle of parmesan cheese, repeated for 4 layers!
I got so many compliments too. Everyone is really making this very easy for me now!! Even DS who has not embraced the diet loved the lasagna.

I made some potato, bacon, and mushroom soup today. It is very delicious. Bought a lot of salad last week, so I'm eating lots of it as well this weekend

well ended up with a little of this and that for dinner today. Bit of leftover lasagna, some black bean quinoa burgers, a spinach/carrot/chicken breasts pieces quinoa pilaf, GF tea biscuits ( they were the " bun " for my burgers ), fresh steamed veg
( green beans, carrots) and a GF Quesadilla to share, and a Quesadilla made from a Dempster Tortilla for DS.
I wish I had more room in my tummy, I cannot move...too full now.

Homemade Cheese Perogies with Onions and Sour Cream, Fried Garlic Sausage and Fresh Steamed carrots. Was delish if I have to say so myself

Had a late lunch of BBQ Shredded Beef over mashed potatoes, love it when you clean out the freezer beef was frozen just had to make mashed potatoes, normally I have it over a baked potato but I was craving mashed.
Dinner is homemade poutine, just something small since lunch was so big.
