Last night I made Sausages (some Grill'em I had in the fridge that needed to be eaten up) baby smashed potatoes with Olive Oil, Salt, Pepper, Garlic and Onion with Roasted Cauliflower. Not bad for dinner alone.
Tonight no idea yet, may have to get creative when I get home as it doesn't sound like mom is too motivated today. May have to find something super quick but warm and comforting, just that kind of day.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

No room in the freezer so had to throw a roast in the slow cooker at lunch. I may eat tonight with mashed potatoes since I have been craving them and they aren't on my meal plan at the moment lol Will slice up the leftovers for the freezer to make hot beef sandwiches with sautéed peppers and onion on the weekend.

I stuck a roast in the slow cooker this morning, so will prob just have some smashed potatoes and other veggies with it (maybe Stove Top) , make a gravy..

spaghetti with meat sauce & spinach salad.
I am also very lucky as my wonderful apple picking neighbour has made me an apple crisp...just need some ice cream and/or whipped cream.

Tonight is BBQ'd porkchops, some sidekicks noodles, carrots 2 ways (dd1 likes them uncooked, dd2 likes them cooked - oy!). i'm going to have some bbq'd asparagus too.
When life hands you lemons, make a lemon pie... lemonade will be all like WTH?!?

BBQ asparagus is so good! So jealous. Dinner with probably be something involving a cucumber. I have 3 in my fridge because I keep buying them and forgetting that I already bought one. Will probably have a protein from my freezer, I'm running out of space in there.

Healthy as hell low cal dinner. 267calories.
Cheesy bake spaghetti squash with spinach and homemade cheese sauce. Boiled carrots. Crispy cauliflower cheese bread.
Edit to add. For dessert I made Rice Krispies squares with the gluten free Rice Krispies.
Dinner and dessert under 500cal.

We couldn't figure it out; had raw chicken in the fridge, but we were feeling hungry and lazy so we went out. On the bright side, I only ate half my entree, took the rest home. On the not so bright side, I washed down what I did eat with two glasses of beer!

we made chicken wraps; tortilla shell, smear cream cheese on, some basmati rice, cooked chicken, bacon, mixed salad greens and ranch dressing.. yum

We went to BP for their 1/2 price pasta Tuesday. It was "free" because I paid for everything with 2 gift cards that I traded for. Dh had chicken and mushroom fettuccine with Dr. Pepper. I ordered their new pulled pork penne. I ordered it without the green onion (so 2 types of onion, instead of 3) and switched out the pasta for fettuccine. It was all pretty good. Even better just to get out of the house for free. LO ate food off our plates.

Its suppose to be a beautiful day (in the high 20's) so I am bbqing prime rib this evening, will prob just nuke some potatoes and have them with butter & sour cream, etc (I do have some bacon, cheese & green onion on hand, maybe I should scoop them out and make like a loaded potato and finish them on the bbq) or make a salad & cook up some mushrooms & onion, etc
