    Worked today and DH and I got our boosters so dinner was simple. A pinto pocket and a side salad.

    A very enjoyable but light dinner for me. One and a half servings of stuffed peppers. ( diet version...lol )
    I can't seem to get tired of this mixture! Will need to make another batch over the weekend maybe.
    About an hour ago made up a colourful and diced veggie filled cold pasta salad to have during Super Bowl Sunday.
    Even tossed in a full cup of cooked dried beans I have in the freezer! ( again a big THANKS to @SassyAshley for posting how she does these )
    Not sure if DH will want meat for the game....ha ha ha ...whom I kidding? The real question is what type and how much?

    Last night I picked up a special Valentine combo at the grocery store-2 small steaks and 9 large shrimp for 11.99. I made a shrimp alfredo last night and the steaks are for tonight or tomorrow-much cheaper than eating out for a special meal.

    I made a Sheppard's Pie with Mushroom Gravy this morning before I started cooking and baking so I can just pop it in the oven for dinner.

    I also have dinner rolls in the bread machine so will have a couple of those on the side because something about the gravy calls for buns in my mind.

    I have a few things ( options ) prepped for various lunch, dinner and snack times. Reaching for any of them will not throw me off my weight loss path.
    I even squeezed in a Greek salad! It's all about portion size, the olives and feta cheese are not my enemy! ha ha

    Last night’s dinner was kale Caesar salad with spicy roasted potatoes & sweet potatoes with homemade tofu feta. Soooooo good I might have it for breakfast

    Do you buy chance have a recipe to share Harbie? Our vegan daughter and partner are coming next weekend and we love to surprise them with new ideas. I'm also going to make vegan cabbage rolls and samosas which should be fun

    We made homemade cabbage rolls I think they turned out ok... wow I kind of lost my leaf peeling technique..thank goodness for DHs skill. (He rolled them better too lol)

    @crafter I admit I used a pre made vegan Caesar dressing from Planted Meals but since I used that up last night I’m using www.littlecreekdressing.ca tonight. I just roasted the veg with a Cajun spice mix and a bit of garamalsa slice since I’m low on spices. Added Daiya parm cheese and the tofu feta recipe from Virtuous Pie. I add extra lemon juice and salt to taste because I like it more salty and briny style. It can be a bit softer than traditional feta but still sooooo good.

    Today we had a date lunch at our fave plant based food truck. Super bowl “wings” and a strawberry chocolate milkshake. Leftover salad for dinner tonight.

    Super Bowl snacks for us were nontraditional. Not a chip or dip or deep fried anything. I had my 2 ingredient pizza dough topped with lots of " free " veggies, plus my pumpkin soup while DH slurped one of his favourite soups from his past, beef barley. ( he made it himself! ) with a sammy on the side.
    He also dished up a serving of a cold pasta salad that I made just for him on Sat. ( atm I cannot indulge in the carbs )
    Neither of us had any alcohol either.
    Somehow we slogged through the game.

    It was an awesome Super Bowl! I made the usual nachos, wings & made donair pizza. The game didn't start here until 8:00 pm so a lot of the eating was already done!
