    No cooking for the cook today! I was doing week 2 of Spend $75.00 get 75 AM at Metro ( email offer ) and used 4 FPC's to pad the receipt, then bought the guys their work meal
    from the hot/cold Deli counter. Got a $10.99 X-large pepperoni pizza ( Mmmm, Metro's is so freshly made and yummy ) , a large Rigatoni with ground beef and 1 breaded chicken
    schnitzel thingy for them to split.
    The schnitzel came as a combo with choice of 2 cold salads but the guys don't care for then so I benefited from the chick pea/feta salad and the carrot/sweet potato/spuds salad.
    Those salads were actually my breakfast once I returned home.

    Dinner should be soon for me but I am not feeling it yet?

    Plans for dinner changed, this is why my meal plans are flexible, Mom had a craving so tonight is Homemade Pizza with Pepperoni, Onions, Mushrooms, Bacon, Cheddar and Parm.

    Normally I would make a Salad but I had a Chicken Caesar Salad for lunch and I am not feeling another salad.

    The guys are off work today! hooray! I have a pot of simmering ( soon to be pureed after cooling ) of extra spicy cauliflower/roasted red pepper soup.
    DH and DS don't care for my soup, ( the pureed consistency turns them off....lol ), so..... DH is making " something " from a small pkg. of snl/bnl chx breasts.
    I heard the word Parmesan mentioned, so he might make both a small pasta dicing some of the chx. and stuff/bake the remaining breasts for them.
    I have other proteins in the fridge ( leftovers ) that I'll clean up first, then Tuesday it'll be a whole new recipe dive!

    Dug out some stewing beef from the freezer and have 2 casserole dishes of stay a bed stew in oven. We absolutely love beef stew on chilly fall days.

    Our Stay a Bed Stew recipe

    1.5 lbs of stewing beef (we split between 2 casserole dishes)
    4 med potatoes
    1 large onion diced
    2 large carrots diced
    frozen peas
    2 cans of mushroom soup (with 1/3 can of water...Campbells made the mushroom soup thinner). Tomato soup works too with 1/2 can of water
    Salt and pepper
    1 bay leaf (remove before eating)
    Bake at 275 for 5 to 6 hours

    I air fryer-ed a whole chicken ( NF great sale on them ) , and made the pumpkin veggie pasta bake casserole! Turned out so delicious. Probably the de-glazing with the red wine, the garlic, herbs, shallots mixture fried up....Mmmmm. We split a bottle of sparkling white wine and called it dinner!

    Tacos/taco salad.

    Chopped up all the veggies/lettuce/shred cheese etc. All ready in containers. Leftovers tomorrow for DS.
