    No dinner plan but starving!

    Had to deal with lean ground beef in fridge so I have it on the stove cooking up now... Not sure the plan- Maybe make a meat sauce for pasta?

    Beef stew in the crock pot. I turned it into wine infused slow cooker beef stew with a splash of wine. We are really living it up around here!

    I used my Lemon Herby Chicken Tenders to make Mediterranean bowls with Rice, Peppers, Mushrooms, Lettuce, Cucumbers (in mine), Tzatziki and Feta.

    I'm still being a good girl eating up leftovers. It's easy when they're so tasty. Today it was meat from 1 of the turkey drumsticks, with my sausage stuffing, DH's velvety gravy and both butternut squash and sweet potato. Tiny slice of DD's baked cheesecake with cherry topping.

    When I went shopping I grabbed Tortillas and Limes feeling that we should have mexican one night, guess I was on to something as Mom announced she thought we should have Enchiladas tonight.

    Tonight will Be Chicken Enchiladas with Mushrooms and Peppers and a side of Mexican Corn.

    Beef ribs are in the crockpot-with a side of rice and stir fry veggies.

    Skipped the rice and veggies and had clearance chocolates instead-not exactly a balanced meal but have gone easy on the treats this season.

    It’s Dh’s birthday today. I’m making a baked hot cheese dip, stuffed mushrooms, French bread, crackers, and fresh veggies (broccoli, cauliflower, sugar snap peas, and garden carrots) for supper. Dh isn’t a fan of cake.

    4 generations for dinner tonight. Ham, potatoes Romanoff, homemade bread with ham dip and some sort of veg. The kids and pup arrived from Ontario in the wee hrs-and that is worth celebrating!

    Last night I played the “Chopped” game for dinner. After rummaging through the fridge, freezer and pantry I came up with a really nice dinner.

    I sautéed onions and the last of my local garlic ( thinly sliced) added some beyond steak bites. Seasoned with a citrusy garlic blend from TJ and black pepper. Added some flour to make a sauce and added no beef bouillon. Served over pasta with some chopped kale from a friend's garden this summer. It was reeeally delicious.

    @Angela273 Happy belated Birthday to your Mr. !! Hey, if cake is not his thing I support the savory, creamy items you made!
    Today i made a WHACK turkey soup from the Christmas bird carcass. So many yummy-licious veg in it. Since I had bought the
    10 lb. bags of both carrots and sweet potatoes there were plenty there to to use. Celery, both red and white onion, spinach, and
    I used the remaining leftover fresh herbs from Christmas. ( rosemary, thyme, Parsley ) . Made a Bouquet Garni.
    Surprising how much meat was left on the bones. Added 2 cartons organic chx broth at the end as most of the stock had boiled
    away.

    Then I made stuffed peppers using the quinoa mixture from Christmas as the filling. Just tweaked it a bit adding canned diced
    tomatoes, dried dill, cilantro and 21 Season Salute spice. Topped them with fresh grated Parm and Mozz to bake.
    Lots to eat now, no take out excuses to be had.
