Start with the basics, Curt, that's what I'm doing with my son:

Tonight, supper was smashed potatoes and beef stew - which had a multitude of veggies hiding within!

Oh, Vee it's out of my head...
I had about a sandwich ziploc bag full of strips cut from inside beef roast... and that made a half a medium roaster with all the other stuff I added. I put everything in the roaster and shove it in the oven! Diced two medium onions, 1 cup sliced celery, 1 can sliced mushrooms - with the juice; about 1 1/2 cups frozen mixed veggies; I happened to have 3/4 cup wonton soup broth, so added that in, plus another cup of water. Mix it all up, add salt, some pepper and garlic powder. Put cover on roaster, put in oven at 350 degrees. Take out and check for seasoning (I had to add salt and more garlic), then I add one can cream of mushroom soup, put it back in the oven for another half an hour. Then I thickened it with flour, then back in the oven to mix the flavours for another 10 minutes, with the oven turned off.
If I weren't cooking for two men with giant appetites, I would just cut up potatoes and put it right in the stew. But my Mama said, always just make potatoes separately, it'll help fill them up! Well, she was right! I would normally use regular carrots, too, but just didn't have any.

Even after I've eaten I end up getting hungry looking at everybody's posts.

Speaking of smashed potatoes, that's what we had with pork tenderloin (again) tonight. I like to coarse mash some baked P.E.I. russets, keeping them a little lumpy with chewy bits and throwing in a bit of garlic, ground pepper, butter, half and half cream and then at the end, fold in the coarse chopped skins. The skins are the best part!

mcminsen, I'm a big fan of potato skins, too. Gee, I could come to your place and eat pork tenderloin with you every day!!!
Tonight will be chicken something.... I have legs and backs, so they are no fun to do much with, probably I'll just marinate and roast them. I'll make rice and mix in stirfried veggies.
