I made a raspberry chocolate for the park meeting today. I used fresh raspberries and made my own reduction to add to the middle layer with the carob icing
I see the plate is still dirty, amazing what you see in a picture lol.We all need a little sunshine every now and then

- 2 1/4 cup all-purpose flour
- 1 1/4 teaspoon teaspoons salt
- 1 teaspoon baking soda
- 1/4 cup olive oil
- 1 teaspoon vanilla extract (I added some butter extract too)
- 3/4 cup granulated sugar (I take out 2tbsp)
- 3/4 cup brown sugar
- 2 heaping tablespoons ground flax + 6 tablespoon hot water
- 1 or 2 tablespoons of soy milk
- 1 cup add ins (cranberries, white chocolate)
- Preheat the oven to 375 degrees F. Combine the first three ingredients in a bowl, set aside.
- Combine sugars, vanilla, and olive oil. Add flax mixture and cream together for about 3 minutes on medium.
- Slowly beat in the dry mixture, (add in a tablespoon of milk at a time if it's a little dry- dough should be sticky)
- Incorporate mix in's, let rest for 10 minutes, covered in plastic wrap.
- Roll the dough into ping pong ball sized balls, flatted lightly.
- Place on a greased baking sheet and bake for about 10-11 minutes, until lightly golden and set.
- Let cool on tray for 2 minutes before removing them onto a rack to cool completely...if you can wait that long!

^ Thanks, Janetta. It's saved to my recipe file. I'm not a fan of white chocolate so will replace with either chocolate chips or nuts
I don't have butter extract though (first time I've heard of it). Can I simply omit or do you suggest something else?

On Saturday I used a chocolate cake mix. I baked cupcakes and a round cake. The cupcakes were piped with butter ream icing and went to my husband's work on Monday to be shared. I tried anew peanut butter icing recipe. It tasted really good, but was a little strong for the type of cake that I baked, so I only used a thin layer of it. The cake went over to a friend's house when we were visiting on Sunday.

Today I'm going to make some ciabatta buns. I find they freeze really well so I can make a few dozen and just pull them out of the freezer and reheat as I need them. I really like to add fresh rosemary and blue cheese chunks to it sometimes, it's a nice flavour combo, so I think I'll make about a dozen plain and the rest jazzed up.

Actually I did bake a veggie meatloaf and some roasted julienne beets last weekend. But no chance to bake some yummy sweets yet

I really enjoy baking, so last night I spent an hour making a list of deserts in my phone. I am hoping to make more goodies. I always enjoy feeding them to others. I have a sweet tooth, but enjoying baking more than eating he items that I bake.
