Last night was assorted take-out: I had Chinese; son had chicken, fries, Caesar; husband had boneless ribs and fresh bread.
For supper tonight - per son's request - pig bum casserole with pasta.

Last night was gf pasta shells in my moms famous meat sauce with a side spring mix salad.
Tonight its Honey Garlic chicken with basmati rice and salad.

made some veggie tacos, tried to make tortillas but it was an epic fail. will have to try again when I have more time.

Was going to make chili but forgot to take the meat out of the freezer haha
so were having roasted chicken with my yummy veggie rice

Home alone for supper tonight - had leftover casserole and garlic toast, with salad from garden lettuce.

I made this AMAZING dinner, courtesy of lmack
Herby French Dip (From Fix-It and Forget-It BIg Cookbook)
3lb roast
2 cups water
1/2 cup soy sauce
1 tsp garlic powder
1 bay leaf
3-4 whole peppercorns
1 tsp dried rosemary (optional)
1 tsp dried thyme (optional)
6-8 french rolls (or any long bun, I have used various ones)
For the buns:
Garlic powder & margarine or butter
1. Place roast in crockpot
2. Combine remaining ingredients in a mixing bowl. Pour over meat.
3. Cover and cook on High 5-6 hours, or until meat is tender and not dry.
4. Remove meat from broth and shred with fork. Stir back into sauce.
5. Meanwhile, mix garlic powder with margarine or butter and spread on buns and toast lightly.
6. Remove meat from the crockpot and place on buns. Pour broth into bowls and use for dipping.
Serve with homemade french fries......YUMMY

Some cheese bread I got half price at RCSS the other day... and salad... put together with whatever I have in my messy fridge!
