I took my husband out for Chinese food at Jenny K's. We had war wanton soup, fried rice, mild ginger chicken, veggie and beef stirfry.

last night i made turkey and stuffing, mashed potatoes, mashed turnip, carrots, brocoli and cauliflower in a cheese sauce, homemade cranberry sauce, green bean casserole, gravy, buns, BIL made sea pie (i think thats how its spelled), cheese and pickle platters and a christmas jello cake recipie i got on a coupon trade. very delish. tonight was turkey soup and leftovers.

Ham, scalloped potatoes & salad last evening

I want to go to Subway, but I don't feel like going out..supposed to storm soon, and it's already full o' snow and ice.

Why can't they deliver?!?!?!

We changed our usual Christmas Day dinner plan of turkey and fixings to this menu. Each one served as a course, so pretty on the plates, it was actually fun too, my kids were a great help which was unexpected!

2011 Christmas Dinner Menu

Perky Turkey Soup
slow simmered turkey stock, with butternut squash cutouts, celery, onions, spinach, bow tie pasta, turkey thigh strips, and chili pepper flakes accompanied with a side portion of homemade sage stuffing.

Salad
bed of radicchio supports tender spring salad greens, with walnuts, sliced MacIntosh apples, dried cranberries and grape tomatoes served with an apple/Dijon vinaigrette dressing.

Cannelloni
Two parcels filled with crab meat, ricotta cheese and spinach, draped in Alfredo, garnished on top with with long strips of blanched tri colour peppers. Accompanying the cannelloni is a nest of steamed long slender strings of carrots holding cantaloupe and honey dew melon balls.

Salmon or Chicken Breast in Puff Pastry

Flaky bundles of puff pastry containing salmon fillet topped with mashed sweet potato
OR
a portion of chicken breast topped with a crown of broccoli.
Both are served with individual nappies of homemade cranberry relish.

Prime Rib au jus

Tender generous cuts of Prime Rib roast served au jus, with sides of mashed potatoes, small red and small new potatoes both par boiled, flattened, and baked crisp coated in olive oil, minced garlic, and fresh basil. Peaches and cream corn niblets and tender baby green pea sweetlets.

Individual Trifle

Served in an over-sized wine goblet uniquely displaying the layers.
The bottom layer of chocolate mousse holds a white sponge cake soaked in kirsch, followed by cherry gelatin, whipped topping, more chocolate mousse, lime gelatin, more whipped topping,dark cherry compote and last layer of whipped topping with rainbow ball sprinkles and a maraschino cherry.
Other sweets offered are apple, cherry, pumpkin or mincemeat tarts, homemade cookies, fruitcake and plum pudding.
