Marble cupcakes for my boyfriends birthday today!
I tried Duncan Hines cake mixes recently & they bake up sooooooo soft & yummy I might have to switch from baking cakes from scratch! Much easier when pressed for time!

Love the kitty cupcakes photo.
Still can't get the coconut pineapple deals out of my head. Swear if I go back up to 345lbs it will be from reading this thread. Ok, maybe not from just reading, but acting on impulse to discover the yummy side of life once again.

Thank you!
I've actually started using mini butter knives (that were a holiday gift!) to frost my cupcakes. It works amazing. They look something like this - a cake spatula would work the same! It's taken me a while to get the hang of creating my swirls, lol.
I'm totally taking back all the bad things I've said about cake mixes and I am loving Duncan Hines. Lemon is my fav! Going to stock up at No Frills!

Well, DD #1 baked peanut butter cookies on Saturday. They were her first fully independent baking project.
They were fantastic. She used the recipe on the back of the PB jar which turned out to be super simple and not messy at all.
I helped DD #2 bake some black bean brownies because I've been aching to try these things. Well-- crazy enough-- the sugar fiend in the family (that would be me) was the only person who actually liked them and they weren't even overly sweet. DH couldn't stand them at all, nor could my DD. I don't think they could get past the fact they were made with beans. Pffft. What a fussy bunch I live with!"Be yourself. Everyone else is already taken." Oscar Widle

I baked some Chocolate Chunk Muffins from Bakerella's blog. She has some really great pictures on her blog. I think I need some more time under my belt before I attempt a cake pop recipe though!
