    I baked rhubarb muffins yesterday. Dh fed LO pieces that did not have rhubarb in it and he really liked it.

    I have a question for everyone. How do you keep muffins from getting sticky on top? I didn't want them to dry out, so I put them in a container with the lid ajar, but they were sticky this morning. Any suggestions?

    I plan on baking a variety of muffins for each elementary school in town at the end of August. I am still trying to figure out the type of containers to store the muffins in and transport them (might be different containers because I will likely need to leave the containers at the schools). Does anyone know how to freeze and thaw muffins, but ensure that they are just as tasty as fresh? I was contemplating baking some in advance because baking with an 11 month old can be difficult to plan.

    I also used Compliments 'just add water' pizza dough, and made cinnamon twists. Made my dough, then as it was resting, mixed together sugar and cinnamon, then rolled out the dough. Cut it into strips then sprinkled the sugar mix on it then twisted them. Baked for a bit and yum! I also picked up FREE caramel sauce and had some of that out for dipping

    Ah, sticky muffin tops, I can totally relate! I do put mine in a big container I have with the top ajar and that seems to do it - then sometimes I'll completely close it so they don't dry out. Sometimes I even just keep them in a plastic bag and do the same thing - however, that's not good for ones with fruit in them, they'll get too soft.

    As for transporting - even cutting down boxes would work - or just about right would be the size of the bottom that 12 cans of soup comes in, then a plastic grocery bag will fit over it.
    Also, you could just transport them in the muffin tins.

    My big container has an insert, so it fits 24 muffins/cupcakes.

    I just made the MOST AMAZING vegan muffins ever.
    I didn't follow a recipe so was very worried they would not turn out, but I have already had two.

    But the best part is these are only 100 calories per muffin.

    I made Paleo brownies with sweet potatos last week & although I like them, the family isn't quite sure. They have a different consistency, more "mushy" than cake like, but the taste is amazingly good & chocolately!!! I think I'll make more & they'll be ALL mine

    I bought fresh blueberries, washed them up and just put them in the freezer. Plan on baking with them at the end of the month. I am baking for about 250ppl at various local schools to start the staff's year off right. Does anyone have some good blueberry muffin or cupcake recipes that you could share with me?
    FYI: these blueberries are pretty large in size.

    FYI......you must refrigerate "moist" muffins....if the fruit content is enough to create moist muffins, they will start to mold in about 12-24 hours, but you won't see the blue strands of mold until aprox. 36-72 hours, but you & the kids will already be eating moldy muffins without knowing it.....ingesting moldy foods can lead to immune-suppresive problems.

    Today I made a peach pie. We have so many peaches & at this time of the year they are so juicy & delicious. I made the pie with tapioca & the recipe is in one of my Mother's cookbooks. It's called Nova Scotia Down Home Cooking & it has some very nice recipes. I scanned the page to share with you. I like the recipe for making a 2 crust pie. It took me many attempts to make a good pie crust. My Mother would have enjoyed a piece of pie with a cup of tea. (My Mom 1919-2002)
