    For Lunch today I made my light version of a ham and cheese quiche - skip the crust, and substitute fat-free yogurt for the cream. I also had a salad of romaine, red onion, red bell pepper, avocado, and lite feta cheese with my homemade vinaigrette.

    This was more like a linner...aka. lunch-dinner!
    The weather finally got up to the 20's here and I had some left over Chinese noodles.
    I ate them cold, just added Kraft's Asian Sesame dressing to it and condiments like garlic chili paste!

    I made pork kabobs on the bbq. I recycled this crockpot recipe http://allrecipes.com/Recipe/Pork-Ch...e-Slow-Cooker/ (it also works great in the crockpot). I chopped my pork into cubes last night and put them in this, and tonight I threaded the pork onto skewers and grilled. DS loved it just as much as he does the crockpot version, he ate more of it than I did!

    I've made that recipe several times now, and have followed the advice of reviewers who said to reduce the soy sauce to 1/4 cup.

    broccoli and cheese stuffed chicken breast, broccoli with old cheese melted on top, and carrots. This is technically both lunch and supper today since I was on a set that didn't feed us like they were supposed to grrr...my actual "lunch" was two chocolate bars so doesn't count!

    I decided to use up some stuff before it went bad. I cooked 2 chicken breasts with pre-cut coleslaw mix, pasta sauce (frozen from a different meal), garlic powder, and worcestershire sauce. Served with rice and a glass of milk. It was pretty good.

    It's been a crazy week (no hot water since last weekend - hopefully today) - all dishes and pots are dirty! Confession: every second day has been takeout because of all this. It gets really old heating water on the stove just to do dishes - argh!

    Anyway, supper tonight will be eggplant - I make it like schnitzel, lightly breaded and fried crispy. I need to find something to go with - maybe potato wedges? Not sure yet. Something for which we can eat off paper plates and not need cutlery, lol!
