As for me I'm starting to get better , I think my cold turned into bronchitis (which in my case makes me atleast functional ..cause it's just a va cough) so I'm going to go through my italian cookbook and whip up something.. Maybe not the fanciest but atleast ill cook something for the first time in 3-4 days ... Ill keep you posted

Didn't have to cook yesterday so guess I will have to cook today..sigh..LOL. Its a beautiful day so prob bbq. I have some bone-in chicken breast so will marinade those and cook them on the bbq..and I have asparagus, mushrooms and a squash to use up so will make up some sides from that mixture! LOL (Asparagus is so good tossed with Zesty Italian dressing and then grill on high for a few+ mins)

Pulled a cooked ham from the freezer last night so tonight will be ham, broccoli with rice/fries for the kids

Tonight Im making cauliflower and cheese soup will probably have some homemade chicken fillets with that and a salad

I think we're having chicken with broccoli & rice,
It is in casserole style & I hope it will taste nice,
You know I really enjoy this thread & all you amazing cooks,
Sometimes I get ideas from here that I'd never find in books,
If anyone has any ideas that will make a spinach salad with bling,
Please post a recipe here for me & I'll be so happy that I could sing,

Thank you lovely ladies for the suggestions. I love the idea of strawberries & cranberries.
Pecans are one of my faves too!
This will liven up my salad.

My dressing recipe is:
- fresh ground pepper
- a few dashes of tabasco sauce
- 1/4 cup of salad oil (I use canola)
- 1/3 cup mandarin juice
- 2 Tbls vinegar (I use white vinegar)
Mix it up & let it rest for a couple of hours before using.
Now I will be adding other yummy things to the salad to make it more exciting.
