Salmon, baked potatoes and whatever veggie I find when I rummage through the crisper or freezer in a few minutes when I arise from lazing in my chair!!

Last night was take out Chinese, I had no idea what time I would be home as I was on inventory at work. Our location finished in record time and were out by 4 pm (yippee us) I was going to make pasta but mom said she was not feeling well but suggest Chinese. I wanted no take out this week but I caved. I can't complain I have been wanting homemade Chinese for weeks so this was a good alternative and yummy.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Hamburger steak,gravy, mashed potatoes or homemade fries and vegies and of course a nice green salad. Dessert will be canned pears.

Smokies are smoked sausages.
Tonight, we'll have leftover lazy cabbage roll casserole, fried ham, pasta, with salad.

Smokies are about six inches long, a medium-grind pork sausage, most often garlicky and a bit peppery; some are very 'smokey' (which we like!). You can get varieties with cheese, too. Some varieities in other places might use a pork/beef mixture.
I found another name for them is bavarian smokies, because of the European influence.
From googling, I found out in the US they are called smoked bratwurst.

Totally made something different for supper than planned above - fried garlic sausage with onions, macaroni with mushroom sauce, with salad.

I have an obsession with veggie burgers these days...
Yves veggie burger, with fried onions and mushrooms. Homemade sweet potato fries with roasted yellow pepper dipping sauce. YUUUUMMY
Have dinner prepped in the crockpot for tomorrow, eggplant & chick pea stew. will probably have it with some couscous and sautéed spinach. So excited, I friggin love food. LOL.

Last night we made a roast beef with gravy, mashed potatoes, corn and salad. Not sure the plan for tonight yet.

Eggplant & Chickpea stew with couscous and sautéed spinach.
I am pretty bummed... About half hour after I got home I realized the slow cooker was smoking, unplugged it and I investigated. The elements must have gotten too hot (even though it was on low all day and I use it almost every day without problems) it melted the electrical cord! The thing is burnt black!! All I can say is thank god I was home!!
Now I have no slow cooker

Ohh that sounds bad I've never actually used a crockpot and left the house all day. I'm too afraid of something happening like that! I only use it usually on weekends on a day when I am home all day and can keep an eye on it. On the plus side they aren't too expensive to replace. Go to Walmart. My mom got be a fairly big one with a damask print on it for around $20-30 as a housewarming gift last year. I use it quite a bit in the winter time for soap, chili, stew, etc.

shmeelady, if you know someone 'handy', see if it just might be the cord which needs replacing.
Tonight for supper was M&M meat shop's Oriental Party Pak (my fave!), went perfectly with the leftover meatless lazy cabbage roll casserole.
