Last night fiance brought home left over lunch from work - they had a Christmas lunch (one of many this week lol). He brought caribean rice, jerk chicken, curry chicken, spring rolls, a veggie chicken mix, roti and pokara(sp?) which is like a spicy dough ball so good!
Tonight - I am craving swiss chalet and since we are leaving this weekend for my parents house for the holidays our fridge is kinda empty so it will either be swiss chalet or pasta lol

Pigs in blankets Going out at 8 and there is going to be food and drinks so I don't want to eat a full out supper but know that I can't survive until 8 without eating! I'm in the middle of a HUGE snowstorm so not planning on cooking anything too big today as most likely the power will go at some point (the wind gusts are suppose to be 120km/hr+ gusts by this afternoon--nuts!!) Luckily, I have the woodstove so can probably make some yummy clam chowder on that later..and I have lots of fresh, crusty bread in the freezer!)

Daughter coming over tonight after work and i have no clue what to make for dinner! I was thinking maybe homemade hamburgers or cheeseburgers with all the trimmings and some vegies and dip on the side.

Last night, husband had leftover KFC and fries - I wasn't hungry when he was, so after he left for a meeting I just made some oven fries.
Tonight will be porkchops - not sure how, or with what yet....

Smokies sound like Polonais a l`aile (Polish garlic sausages). Things are a bit different here in Québec so i had no clue what smokies were.

The power held, so I ended up making this recipe for Teriyaki Chicken..it was REALLY good. I baked for about 1 hr & 40 mins as they were still a little icy and basted every 10-15mins. Tues night - Christmas potluck - sweet & sour meatballs with sweet peppers & cranberries, wild rice, vegetarian spring rolls, mini perogies, raw veggies & red pepper hummus.
dessert - walnut banana bread, min eclairs, & 2 kinds of homemade bread pudding: chocolate and cranberry - first time I had bread pudding - they were very yummy.

My DH helped the school chef and in return he sent home a vegetarian dish of couscous with chickpeas, with sides of steamed asparagus and braised swiss chard. Looks good to me but haven't tried it yet. Anything I don't have to cook sounds good to me-I am in lazy mode today!

Ended up making a one pot oven meal (didn't feel a whit creative or energetic today...) - sliced carrots and potatoes on bottom of casserole, just s+p and garlic powder; four pork loin chops on top with a sprinkle of french onion soup mix, drizzle of oil over, bit of water to make a broth while cooking, and baked at 350 for an hour and 15 min - yummers! Sopped up broth with bread/buns.

A new recipe I just tried ... SOOOOOO simple I can't even believe that I didn't think of it before and had to see it in a magazine ....
Pizza macaroni ..
Macaroni, peppers, onions, mushrooms, pepperoni, pizza sauce and popped in the oven with some mozzarella .. Needless to say it was a total hit with DD and DF ..

And yesterday was a ham gratin.. Made a thick beshamel type sauce with a touch of gArlic and chicken stock.. Tossed in cubed ham, peas, broccoli and onions.. Plop that in a Pyrex and topped it off with cheddar, emmental and bread crumbs for crunch ..
Cn you tell I bought a magazine with 100 gratin recipes lol! Been craving (apart from munching ice) cheese and crackers and cheese all over everything.. So far so good !

I put a pork shoulder roast in the slow cooker this morning...lots of sweet onion, s & p, coated with Diana's chicken & rib bbq sauce...around the 6 -7 hr mark will take out, cut off all the fat, shred, remove the onion bits and put the shredded meat back in the sauce to cook for another hour or so--yummy for pulled pork sandwiches!( I like it on the little fresh dinner rolls)
