I made a huge stock pot of cabbage roll soup, along with buns and cheese bread. Yum. So this is what we'll eat for the next few days. Cabbage roll soup
3/4 pound ground beef
salt and pepper
1 T paprika
1 onion, diced
2 carrots, cut into half moons
2 stalks of celery, diced
4 cloves of garlic, minced
1 can diced tomatoes (or of tomato sauce, I didn't have any but that's what I wanted to use)
1 quart chicken or beef broth
1/2 head of cabbage, core removed and the rest sliced into thin strips
1/2 c rice
Salt and pepper the beef, add the paprika, and mush in. Brown the beef in a small amount of olive oil, then remove to a bowl. Cook the onion, carrots, celery and garlic until starting to soften, then add the tomatoes, broth, and cabbage. Add the beef back in, and enough water to cover. Cook 15 minutes, then add the rice. Cook another 15 minutes, stirring occasionally, until the rice is done and the cabbage is cooked to your liking. Add salt and pepper if necessary. Serves 4.

Last night was one of my odd meals, I had a Cesar Salad with homemade Croutons (had some old fresh bread to use up) and flatted spiced potatoes with sour cream. No protein just potatoes and salad.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Last night was Indian Pan harbie fusion I marinated chicken thighs in some sambal, honey,fresh garlic,soysauce and lea&perrings and pan fried them. I made a "gyro" using the chicken, some riata, shredded lettuce on naan bread. It was so stinkin' delish Tonight my mom is cooking (since I'm coming down with the sore throat,etc... my dad had earlier ... thanks dad :*(). She will be making Danish meatballs ,hasselback taters and gravy.

um, tomorrow night might be fried kitty...since he's on the kitchen table behind me....AND SCRATCHING AT MY COUPON BINDER! he doesn't value life ... (there was a time that an animal on the kitchen table horrified me...i've given up since i don't know where my spray bottle of water went and i'm too cheap to buy another one) - well not quite given up - i yell and then move the cat (or 2). *sigh*
we had chops in mushroom soup with a bit of montreal spice, some tobassco and a bit of milk, jasmine rice and steamed broccoli - seemed to be sans cat hair lol

Pork tenderloin with onion potatoes and a salad. Pretty good.. especially the potatoes !!
I also made a side of garlic sautéed mushrooms for DF .. i hate mushrooms

I LOVE mushrooms! I buy a two pound carton of fresh mushrooms at Costco nearly every week, DH and I eat them with most things. I do not like them raw, but love them cooked, especially with onions and peppers. I bake them in the oven, nom nom nom!
But my DS is with you, they're poison (along with onions).

I'm a mushroom love, too, cooked and raw as well.
Gosh, suppers have been a challenge.... Tonight was wieners, sliced the long way so they would curl, roasted with sliced onions, garlic and Italian spice; fettuccini with mushroom sauce.

Had dijon marinated road kill chicken (one of those flattened chickens that has been mostly deboned), roasted potatoes and fruit salad last night. Such an easy way to cook chicken!

I think it is Montreal steak spice which you can get at the grocery store and is tasty on steak and other dishes.

Last night I had a doctor's appointment which ran late and than we went out to grocery so dinner was at Wendy's a Burger and Fries. Nothing fancy but it was a quick meal before shopping since we were already running behind schedule.
