We had cheddar cheese perogies, fried bacon with chopped ham, red onion, and sour cream with a glass of milk. It was pretty good. There are some leftovers in the fridge.

Sunday has become the day our son comes over, so I've tried to plan meals that are his faves, or things he wouldn't be making for himself.
Tonight, I'll make crunchy coated oven roasted chicken drumsticks, use the same coating for potato wedges, and his fave of all - breaded fried eggplant.

That is so sweet, I know in our house(s) Sunday dinner was always a big thing. It was the night nicer meals, it is actually quite surprising to me now that we did this since Sunday was always the day me or my bro had to go home, depending whose house we were at for the weekend.
Dinner tonight still not sure, it is going to be a new recipe as we have not tried one yet this week, but since we did not get out to grocery shop yesterday due to the weather I need to find something we have everything we need in the house.
2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Had ham and 'crash' potatoes a la Pioneer Woman. Also have chicken thighs in the crockpot to make enchiladas for the freezer, since I have piles of refried beans in my fridge to do something with! Made 'em in my crockpot the other day.
Also did black beans in my crockpot overnight last night, just plain black beans to put into other things like chili, enchiladas, and I've been having them with my breakfast recently. Most of them were frozen.

My sister went to blain WA.. She got me a roasted chicken from
Costco and I've managed to stretch this chicken to three meals an a small pot of chicken broth not bad for a $5 chicken.
The first meals we just had roasted chicken with rice and veg stir fry.
Second meal I made chicken noodle soup
Third meal is shredded chicken chow mein ( which is what we r having tonite
:D

Tonight we did Chinese at our once favourite restaurant but now it's gone downhill

Last night was Stuffed Pepper Casserole with Homemade Parmesan Garlic Bread. The Casserole was good and that recipe is definitely a keeper but will not make the bread again, it just tastes like white bread you cannot taste the parm or garlic which is shocking because when I was making it both me and mom thought it was a lot of each item and were worried it would be too strong. I put in the full amount but you could not taste either.

Sunday dinner is always a big deal at my grandmother's as well. I will sure miss her cooking when I go back to ON in a couple+ weeks. Yesterday was the typical Sunday "Jiggs" dinner, potato, carrot, turnip, cabbage, salted cabbage, peas pudding, bread pudding, beets, pickles, salt meat, roasted pork, and lots of gravy ! lol..I got to take home most of the leftovers (incl dessert) so will just have to re-heat later.

Ended up making way too much food yesterday for supper, so even with lots that our son took home, we still have plenty of chicken left for tonight, will supplement with potato salad.
