Meat Loaf with Mashed Potatoes, & Green & Yellow Bean with Baby Carrots.
We had some ground pork we needed to use up after defrosting it in error the other night instead of ground beef and we only do so many things with ground pork (I should really look into new ground pork recipes) so Meat Loaf it was.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

I revised our supper plans. Dh got home late from work unexpectedly. One of the trucks are work broke down, so he drove out to rescue his co-worker. The tow truck was going to be another 2hrs and the truck had no power, heat, etc.
We had home made hamburgers, caramelized red onion, home made macaroni salad (to use up more ham), boiled mixed veggies, and a glass of milk. It was pretty good. Dh and LO each had a bun to go with it.Help me out with Swagbucks and we can both earn gift cards and PayPal money

Tonight is turkey tacos. I'm getting sick of them but my 2 kids can't agree on anything to eat except this. at least I can load it up with lettuce and tomatoes and nobody seems to complain.
When life hands you lemons, make a lemon pie... lemonade will be all like WTH?!?

Zonny-style enchiladas. I even made my own refried beans from dried beans, instead of using canned! I used this recipe:

I modified it a bit, reduced the salt as many others suggested, and instead of cooking on high for the whole time, I soaked the beans overnight and cooked on low the next day. I added some chili powder and chipotle powder. DS thought they looked gross, but once they were inside the enchiladas with chicken, black beans, salsa and topped with cheese, he wanted seconds.

Last night's supper was baked chicken thighs with a little bbq sauce on them. Leftover home made macaroni salad, cucumber salad, and a glass of milk. I had a Mars for dessert.

Last night was Bacon and Tomato Sandwiches with Chips and Dip. Was supposed to be Pork Chops but mom did not want them.

Last night was pork stir-fry.
For tonight, will be last of the leftover pork tenderloin, and was thinking of making roasted potatoes and sweet potatoes (have had lots of rice this week), but someone mentioned scallop potatoes, and think that sounds good. For veggies, probably salad, cause out of veggies for roasting (wishing I had some green beans and/or beets).

Bacon wrapped scallops, bruschetta crostini & angel hair pasta with baby shrimp (olive oil, basil, chopped garlic, chopped tomatoes, parm. cheese, white wine ~ might have to drink some to make sure it's good hee hee)

The past few days have been really hectic for us. Last night we went out to an upscale buffet to celebrate hubby`s upcoming retirement on Feb 1st. It was at the Casino de Montréal at Pavillion 67. We started with soup: i had cream of carrot and hubby has chicken noodle, with Grissol sticks, hot buns etc. I had a pile of shrimp with seafood sauce. Then i had Roast Beef, mashed potatoes and a bit of Julienne fries, mixed veggies and gravy. Hubby had the same and he also had some stuffd turkey, veal liver on a nice arrugula salad, sme sort of dumplings. I had some dumplings also plus garlic shrimp brochettes and some sort of mussels with garlic, cheese and bread crumbs. For dessert i had 4 chocolate covered strawberies, a small Madeleine with Marcaspone whipped creme covered with cherries, some Tiramisu, and a couple of pinapple chunks. Hubby had the same.

Tonight for dinner it will be simple. Ham slices with mashed potatoes, LaSoeur peas, and a nice big salad.
